Here on the gas I put a lovely saucepan and I've got some lovely pancetta. Two nice big
fat slices of pancetta. Just slice it. Small slices. I need small. One and a half should
be okay. Oh yeah. That gives a lovely, lovely fantastic flavour. That salt inside the pancetta.
I need olive oil. About a couple of spoons of olive oil. Make sure it's extra virgin
olive oil. I need 25g of butter. Keep stirring it. Get the butter and the olive oil married
together. Lovely colour. At this stage, before it dissolves, get the pancetta inside. Stir
them nice. Here I have one carrot, one stalk of celery and one medium onion. Sweat. Nicely.
Okay, once it sweats, here I've got fantastic 200g of pork. Lovely, free range. Happy pig!
Yes! Which has a fantastic life. Just put them inside. Stir it. Add 200g of beef. So
simple. You have to loosen up all the meat. Make sure they're not in a big lump. It's
nice. Now get all the water out of the meat to come out. You can see it started bubbling
on the side. Now you can see all the water has evaporated. This is where we start to
cook. This is now what we call a sofrito. You can see all the oil now is coming out.
It's stirred before there used to be water. Now, this is when the confetti has been thrown
to the bride and the groom. A good half glass of wine. And this is what it's about.
All the wine has evaporated. Inside this lovely bowl of terracotta I've got one and a half
spoon of pure concentrate of tomato. Not tins of tomato. 200ml of chicken stock, beef stock,
make your own stock. Just pour them inside. With the help of a spoon, make sure you dissolve
everything. Nice. And just pour them inside. Keep stirring it until it's all dissolved
nicely. Just a little touch of salt. Now turn the gas to very, very, very minimum and let
it cook for about two hours. Then again check it in case you need a little bit more fluid
or perhaps not. While we're waiting for two hours, I think it's better if you subscribe
so you can see how many other beautiful videos I'm making. Right. Look at that. Miracle.
Fantastic. If you want to see more of this fantastic video, go to cittadio.com and let's
