On today's episode, pickled red onions.
Red onions are one of the greatest vegetables known to mankind.
I love them.
Raw, maybe a little bit in a taco.
Caramelized on top of a steak or in a sandwich or something.
Amazing.
And then there's the pickled version that are fantastic.
Goes together in about three minutes.
You'd be so happy.
You're going to love them for this.
First we make the little pickling...
What's it called?
Pickling stuff.
Solution, thank you.
Pickling brine, right.
So, half a cup of apple cider vinegar.
A cup of water.
A teaspoon and a half of salt.
So, like that.
Tablespoon of sugar.
Whole peppercorns.
Half a dozen of whatever that is.
And then we mix.
So just till the salt and the sugar are incorporated.
How's that look? Good?
Perfect.
Alright, let it sit.
Now, onion.
I've taken the ends off.
I've cut it in half.
We want thin pieces like this.
And when you're done, put them in a bowl.
And put boiling water on top.
Just let them sit about a minute.
You can break them up a little bit.
But mostly, it's that.
Clean as you go, always.
And then, you can do this.
And you can strain out the water.
Come back.
Pack them in a pint jar.
I could use tongs.
Because they're hot.
What a surprise.
They just had boiling water on them.
Just cram in as much as you can get in.
That was a pretty big onion.
Use a medium red onion.
Okay?
And then, the liquid.
Get a couple of these peppercorns.
You want to know something?
I have tears in my eyes.
Big tears.
Because not from the cutting.
The cutting wasn't the problem.
It was when the hot water hit the onions.
I got real emotional up in here.
Okay.
You let them cool completely.
Back up.
Let them cool completely.
Cover them.
Put them in the fridge.
And then, you get these.
I made these the other day.
I've been working on them.
And on top of a taco.
On top of a piece of fish.
They're unbelievable.
Look at the color change.
Right?
Wow.
Drain them a little bit.
Those are gorgeous.
Right?
Oh, yeah.
A little vinegary.
Mmm.
The onion bite has all but gone.
And that hot water moment has softened them just enough.
But you can probably hear them crunching.
So good.
Make them.
They'll stay in your fridge a couple weeks.
Great thing to take to somebody's house as a little gift.
Like, I'm not a big crafter.
I'm not making, like, soap and soups and junk like that and taking them to people's house.
But somebody who's having taco night, those belong on a taco.
So, take them.
Make them.
And take them along.
All right?
