Hey guys, it's Abby. Welcome back to my channel. In today's video,
this is going to be a part two of my previous freezer meals video.
These are seven more freezer meal casserole type dishes that you can double and
have 14 meals for about a hundred dollars and keep in your freezer.
I love to have these on hand.
I at least use one of these a week whenever I don't feel like cooking.
These are also great to have on hand when you're having a baby like me and you
know you're not going to be cooking and also great to give people when they're
have babies. What I like to do is double batch cook.
So I do this at least once a week.
I pick something that I'm making and I make two of it and I save it for later
and it helps me be able to save money on my regular week of grocery budget.
These are here for you to help you make your life easier whenever it gets really
crazy like mine does. Make sure to stay tuned for next week's video.
I'm going to be showing you how to shelf cook and how to use meals like this in
your freezer to plan your weekly meals on a really,
really slim budget. Like I did that today,
$30 at the store.
It's all I spent because I was using a pantry, freezer and shelf.
Anyways, keep on watching. Let's get into the video.
The first meal is chicken spaghetti. This is a personal favorite,
but all you need is two pounds of spaghetti noodles.
Boil them like usual.
I like to break mine in half because it's so much easier with kids when they're
already half the size than they should be.
It's just way easier to cut it up and it's easier to stir them around.
So then I am putting some butter in a pan and I am going to roast some bell
peppers and onion.
You could just use like one onion or a couple of bell peppers,
whatever you'd like,
but I just like to roast these and spray your pan for every meal.
So this requires two cans of cream of chicken for each dish.
So total you would need four and I'm going to spoon in my bell peppers and
onions that I just browned just half and half.
And then I'm going to go in with my Rotel and this is my favorite part.
It makes it just a little bit spicy and then I'm going to shred two pounds of
chicken. So these are actually chicken thighs.
You can use chicken breast, whatever you'd like.
I shred it with a blender sometimes or hand mixer.
Sometimes I do it with a knife and a fork,
but it just depends on your liking.
Now I'm going to add my spaghetti noodles that are cooked and I'm going to need
to stir them all together. Really, really good.
Like super evenly, the best that you can.
And then this is the best part.
It's when you put basically a block of cream cheese in each piece of chicken
dish and then throw on your chicken and stir it up and everything melts the
cream cheese. It's glorious. Absolutely delicious.
So once this is stirred together,
you're pretty much done and you can top it with cheddar cheese and throw it in
the oven. Wonderful. So, so good.
The next dish is pizza casserole and my kids loved this meal and it is probably
the easiest meal in this video. You just boil two pounds of noodles,
whatever your choice is.
I'm using rotini noodles and I'm going to separate them into my pans and then
I'm going to throw on spaghetti sauce of your liking.
It can be traditional meat sauce, marinara, whatever,
but I'm going to put one jar in each pan and then I'm going to add a little bit
of water to the jar and get as much as the extra in there as I can.
I'm throwing on some oregano for a little bit of a flavor.
Now I'm going to top with cheese,
mozzarella and I will now add on pepperoni as much as I can and this is done.
That's it. It's super simple.
It does remind me of pizza, like obviously hello the pepperonis,
but if you wanted to make this more of like an adult meal and you could totally
add in like onions, bell peppers, olives,
and mix it into the noodles or put it on top and then just top with pepperoni.
Like totally could make it more for adult and not for kids.
The third meal is enchilada casserole. Now I'm going to be completely honest.
I've never cooked this before until this video and it was so yummy.
Enchilada sauce in the bottom of the pan and these are like flour corn tortillas,
but you just spoon on some refried beans onto each tortilla and this is going to
become like your bottom layer of the casserole and you're going to lay this
down and then on top of this, oh look at my little helper.
On top of this you are going to put on a mixture of beans,
corn, rotel, and taco seasoning.
Oh yeah. And also a pound of meat into each pan,
not a pound total.
I split a bag of taco seasoning between each meal because the enchilada sauce
has a lot of power to it, but you can do one of each if you would like.
So spoon on your mixture and then basically this process is going to repeat
itself. You can add cheese,
but then you're going to do another layer of tortillas and beans.
Throw on your mixture, the rest of it,
layer of cheese again and you're going to put it in the oven.
Next meal is garlic Parmesan casserole.
So I started off with baking a whole entire bag of chicken thighs.
This was about two to three pounds.
I cooked it in the oven first and now I'm going to shred it.
Sometimes I shred it with a hand mixer.
Sometimes I shred it with a fork and a knife, just whatever I feel like doing.
But after this is shredded,
I'm just going to set it to the side and I'm going to pour in my rotini noodles
that I was cooking on the stove top and I'm going to pour in a jar of spaghetti
sauce into each pan and then I'm going to add water again to the jar to make
sure I get all of the extra.
And now I'm going to stir and make sure it's evenly coated on the noodles.
And then I'm going to throw in a little bit of mozzarella cheese to mix into the
casserole dish. I'm just doing about one to two handfuls of cheese,
nothing specific, but then I'm going to stir it in again.
And now I'm going to add in my chicken and stir for the third time.
And this should be ready to put in the oven.
Once you take it out of the oven,
I'm throwing on garlic breadcrumbs and I'm also going to throw on the Parmesan.
Now this really added to the texture of the dish and that's why I liked it.
I added on mozzarella at the very end and it immediately melted,
but you can do whatever you would like.
The next meal is taco casserole.
So all I'm going to do is throw in Rotel into each dish and a pound of taco meat
into the pan as well.
And I'm going to add in a half a bag of taco seasoning into each pan.
Now I'm going to add in a can of corn into each pan and a can of black beans
and give it a good stir. Now half an onion I'm splitting.
So a fourth of an onion in each. If you really like onion,
go for a whole onion in each, whatever you prefer, half an onion in each.
But after this, all you do is add rice.
So you could do two cups of rice into each pan. You could do three,
whichever ratio you prefer. But that is it for this dish.
All you do is stir it and add cheese on the top.
And it was so yummy.
This meal is called French onion casserole. Oh my goodness.
My husband loved this one.
Like we ate the whole pan pretty much for one meal.
I could not stop myself. Anyways, you need two cans,
a cream of mushroom into each pan.
I cooked up two pounds of ground beef,
drain your grease and mix it in.
And then on the stovetop I am cooking two pounds of egg noodles.
So one pound into each and then the best part is the French onion dip.
Oh my goodness. This was like amazing.
Give it a good stir.
And then you're going to do another jar of French onion dip and put it in the
other pan.
This is like kind of like a Thanksgiving ish dish because of the French onions.
But the French onion dip, man, it was like a cream cheese,
hands down the best meal in this video, in my opinion.
Now you top it with French onions and I'm going for a whole entire jar of them
on one, spread it out and then place the other on the other pan.
Now you have to be careful whenever you cook these because you don't want them
to burn. So if you want to put foil on the top, when you cook it,
you can or you just really got to watch it. But that's it.
And the last one is breakfast casserole. Now I know I just said that other one
was great, but this one was so amazing.
But I am sauteing two green bell peppers and one onion with butter and I'm going
to use hash browns and place them into the pans.
Now I'm doing a large nine by 13, like a smaller nine by 13.
It's really not a nine by 13 and then I have like a little square eight by eight
pan I'm wanting to use up. I've spread them out in there.
I cooked up two pounds of sausage that I had in the freezer and mixed in my
onions and bell peppers.
Now on top of my hash browns,
I am cutting up two blocks of cream cheese into little squares.
Now you can stir them in with your hash browns,
which can get messy or you can just lay them on top like I am and stir it later.
So now I'm going to put on top my meat and onion mixture
and now I'm going to top it with cheese. Now looking back,
I wish I would have put way more cheese on it,
but I think I was just trying to have a light hand because there's so much cream
cheese in it. But no, like just go for it.
Sharp cheddar tastes amazing too with it.
In a separate bowl,
I'm going to mix in a half a cup of flour and then two cups of milk and whisk it
together to make sure that there are no lumps and this is going to help thicken
up the egg mixture so it's not so rubby.
But now I'm going to crack 24 eggs.
So I shortened this clip because you obviously don't want to watch me crack 24
eggs.
But after I do that I'm going to get out my hand mixer to make the process go
way faster and I'm going to mix this all together really,
really good.
Like no lumps of eggs if possible.
Now once your eggs have been mixed together pretty well,
you can throw in the flour and milk mixture.
Basically done and ready to go into the oven. Now whenever I cook it,
I like to leave it like this and then right whenever I'm serving it,
I like to kind of mix it up to spread the cream cheese around.
Thanks so much for watching guys. I hope that you enjoyed.
