Hello everyone and welcome to Food is Love I hope you are all doing well
This week I suggest bringing the restaurant to your home with two recipes that you often eat at a restaurant or have delivered to you
We start today with stir-fried beef noodles
You can of course substitute beef with chicken or shrimp for example it's up to you
For the rest of the ingredients I have included in the video description a detailed list along with the exact measurements for making this recipe for two or three people
And of course I will go over everything with you as we go along as usual
As for noodles you can choose between fresh noodles or dehydrated noodles
Both will work perfectly even though I have a slight preference for the fresh ones
Enough talking let's get to the recipe
First thing we're going to look at together is the mushrooms
You'll need four or five large shiitake mushrooms
You can find them for a fee but they are easier to find in their dehydrated form
And in that case you will think to rehydrate them in warm water one or two hours in advance
If you can't find any near you just take another type of mushroom like Paris mushrooms that will be very good
You can also now cook your noodles in boiling water according to the instructions on the package for the cooking time
Think about untangling your noodles
Once cooked drain them and rinse immediately with cold water to stop the cooking
Now we can season and marinate our meat
I have a 250-gram steak in front of me but I could have chosen beef tenderloin rump steak ribeye or even chicken
It makes no difference to the preparation
You will have to finely mince this meat
For your convenience I recommend placing your meat in the freezer for about 30 minutes to harden it slightly
The cutting will be easier Once the
meat is finely chopped place it in a bowl
And you will add a teaspoon of black soy sauce
A tablespoon of light soy sauce
A tablespoon of oyster sauce
A teaspoon of cornstarch
A teaspoon of brown sugar
You are going to grate one or two cloves of garlic
And you will also grate about 2 centimeters of ginger
You mix well and you can let your meat rest at room temperature while you prepare the rest of the ingredients
It happens to be a carrot mushrooms a large onion 5 or 6 stalks of coriander 2 green onions if you can't find them replace them with green onions
First peel your carrot and then cut it into julienne
Then after cutting off their stems coarsely chop the mushrooms
Now cut the onion in half then each half into eight pieces
You will roughly chop the coriander including the stems
The same for chives but chop the bulbous part more finely after of course cutting off the roots
Last step before cooking it involves preparing the sauce with which we will stir-fry our vegetables and noodles
In a large glass pour 1 tablespoon of light soy sauce then 1 tablespoon of dark soy sauce 1 tablespoon of oyster sauce
1 tablespoon of rice vinegar 1 ½ teaspoons sesame oil 1 ½ teaspoons of black pepper
You can enhance this sauce with a bit of chili puree or sriracha
To this you add 3 tablespoons of water mix well and the sauce is ready
You will now pour 2 tablespoons of oil into a hot pan
Once the oil is very hot sear your meat for 2 minutes then remove it from the heat
Once the meat has been removed in the same pan and over high heat you will again heat 2 tablespoons of oil before adding the onion and carrot
Sauté for 2 or 3 minutes then add the mushrooms
You mix and continue cooking for an additional 2 minutes before the meat returns
After thoroughly mixing you can now pour the sauce
And right away place the noodles in the pan giving them a few quick snips to help mix them
Once everything is well mixed and the noodles are completely coated in sauce you will add a large handful of soy sprouts
You keep mixing them up
You now add the coriander and chives
You turn off the heat and finish mixing your noodles
Here are our spicy beef noodles ready to be enjoyed
Feel free to add some spicy sauce
I hope you enjoyed it and I'll see you next Saturday for a new home restaurant
Ciao
