That is so good.
Hey everyone, welcome back to another video.
I'm Jasmine.
And I'm Chris.
And today we are going to be eating only vegan Mexican food for a whole day.
You guys seem to love our Filipino version of this video
so we wanted to continue the trend and bring some Mexican food to the table.
We consulted our friends Ana and Alexa
to figure out what we're going to eat.
They're awesome vegan Mexican content creators.
Link down below, check them out.
Yeah, they're great.
So they picked two meals for us
and then we're going to be doing something a little fun later on.
For dinner.
Yes.
What are we making for breakfast?
So for the first recipe of the day, we consulted Ana
and she is, like we said, she's a vegan Mexican content creator.
She shares recipes, she shares lifestyle content, workouts.
We will link all of her social media down below.
Actually, she has a workout channel here on YouTube that I do all the time
and it kicks my ass and I would highly recommend it.
We were so sore the other day.
Oh my gosh, she always crushes me.
Thank you so much for letting me pick your breakfast for today.
As a very Mexican person, you cannot go wrong with chilaquiles for breakfast.
I love mine with sour cream and before I used to put some cheese on it.
So if you have some cheese on top, you can put that as well.
But yeah, I hope you guys like the chilaquiles.
And if you need a snack later today,
always chips with salsa Valentina is my go-to.
I hope you enjoy your day eating all Mexican food.
Ana was supposed to send us her mom's recipe,
but she wasn't able to send it to us on time before us filming this video.
Yeah, did I remember that correctly?
So we actually went to Alexa's website and we pulled her chilaquiles recipe
and I hope that it does Ana's mom's recipe justice.
We shall see.
She'll let us know when she sees this video.
Before we get this video started,
we wanted to give a huge shout out to Ritual Vitamins for sponsoring today's video.
Their vitamins are vegan, non-GMO, gluten-free, sugar-free, allergen-friendly.
And what I love about them is they're minty flavored.
I have a really hard time in general taking vitamins.
So this not having that after like fishy flavor is like the best thing ever.
And it's made it so much easier for me to take my vitamins,
stay on top of it and fill in the gaps in my diet.
So they recommend habit stacking,
which basically means you should associate taking your vitamins
with a ritual that you do every day.
I guess that's the name.
There you go.
So we do it with our morning beverages.
Jasmine has matcha, I have coffee.
And we remember when we drink our coffee and our matcha to take vitamins.
Otherwise, I know I will forget to take them.
That's how it always was with my other vitamins.
So yeah, I appreciate the no nausea aspect of it.
And another thing is they have essentials for women.
So they have a women's multivitamin, men's,
and then they also have a 50 plus teen vitamin, prenatal, postnatal.
And yeah, all the information will be linked down below on their website.
And we also have a link and a code for 10% off of your first three months.
So go check it out.
Last thing I want to mention with any supplements,
you are going to begin taking to consult a physician
just to make sure these are right for you.
So let's get into the chilaquiles.
So to start off this recipe, we're making the sauce
and we're going to add some tomatillos, onion and garlic to a pan
and we're going to char them.
We also forgot to add the serrano pepper,
but we're going to add that in later.
You can also do this in an oven as well.
There's instructions in the recipe link down below.
We'll add that to a blender with some salt, sugar,
and the serrano pepper that we forgot as well as some cilantro.
Then we're going to blend that until it's smooth and set that aside.
Next to a blender, we'll add some garlic powder, water, nutritional yeast,
and some soaked cashews and we'll blend them up.
We also forgot to add the lemon, so we're putting that in here.
Next, we sliced up some onions
and we're going to saute that until it is nice and caramelized.
Next, we're going to add in our tortillas as well as the sauce that we just made
and we'll mix that all together and let it cook for about five to seven minutes.
We're going to add some vegan cheese on top
and then cover that with a lid and allow it to melt.
Once it's melted, we'll top it off with some cilantro
as well as some avocado and our cashew cream.
We have additional sauce that we can put on top as well.
I didn't put that on top and I'm just going to serve it with it.
These look really good.
So I'm just going to like kind of cut it into four, I don't know.
Like a pizza?
Yeah, I feel like that's going to be the easiest way.
My parents are here, so we're going to give them some too.
But I figured we should just try it with you on camera.
Oh my gosh, that looks so good.
Look at this.
All right, let's eat it.
I'm scared.
It's going to be spicy, but we'll see.
I got to crouch.
Here, let's switch spots.
Wow.
Oh, that's really good.
That is so good.
Oh my gosh.
10 out of 10, Alexa.
Love it.
Amazing.
We actually had a live stream.
If any of you were there, thanks for coming.
But we told you we were going to be making this.
So here's the recipe.
We'll actually link this down below.
Oh my gosh, this is so good.
These are so good.
I've never had the green sauce before.
I've only had it with the red sauce.
I would highly recommend this recipe.
We're going to continue eating.
I can't even talk right now.
I'm so hungry.
I'm going to eat more.
We'll see you for lunch in a second.
Oh my god, my head.
From wearing a scrunchie?
Yeah.
This happens when I wear a hat too, it feels like.
I don't think it's the same.
Wow.
My hair's really chaos.
Oh my gosh, look at that.
It looks a little...
Does my hair look weird?
Is it too flat?
No.
It's lunchtime and we're going to cook up another recipe from Alexa.
So for lunch today, we had Alexa.
Hi everyone.
I'm Alexa from Alexa Fueled Naturally on Instagram.
Then I run a blog called Fueled Naturally where I share vegan recipes.
I want to thank Chris and Jasmine for having me on this video.
I'm very honored.
Thank you so much for thinking of me.
So I do have quite a bit of Mexican recipes and that's because I'm Mexican American.
I'm so proud of my culture and also we just have bomb food
and it's actually pretty easy to veganize.
So I've had so much fun veganizing my favorite family dishes I grew up eating and knowing.
And one of them being rajas con crema.
It is so good.
It's this creamy pepper dish.
You basically roast some peppers and you make this beautiful cashew cream
and you put it all together and you have this very comforting meal.
You can eat it in tortillas, either corn tortillas or flour tortillas
with a side of rice or just with tacos as is.
But it's delicious and I hope Chris and Jasmine enjoy.
Charred poblano peppers, there's some corn.
It looks really good.
I've seen her make this on Instagram a million times and it looks delicious.
And we stuff it in tortillas.
Is that it?
Yeah, we're gonna wrap it in tortillas.
It's gonna be delicious.
I'm so excited.
The first thing we're going to do is char some poblano peppers
until they are, well, nice and charred on the outside.
As the peppers come off the stove,
we're gonna wrap them in damp paper towels and then add them to a large bowl.
And then we're just going to cover that bowl with some plastic wrap.
Insert footage of us struggling with the plastic wrap here.
I'm sorry, I hate this.
Me too.
Is it on the other side?
No, it's on that side.
It's here.
We'll let the peppers steam for about 10 minutes, uncover them,
and then we'll unwrap them from the paper towels.
Then we'll use the paper towels to scrape off the charred skin like so.
This is actually very satisfying and I really loved the process of this.
Then we're just going to chop those up into some strips.
Then we're going to saute some onions until they are nice and soft.
Then to that, we're also going to add in some garlic, the sliced poblanos,
some corn, salt, and pepper,
and just cook that until everything is well cooked and softened.
And then we'll make our cream sauce.
To a blender, we'll add some soaked cashews,
some unsweetened almond milk or any unsweetened milk of your choice,
some lemon juice, salt, garlic powder, and nutmeg.
Then we're going to blend that until smooth and transfer that to our pan.
And basically, we're just going to mix this until it is nice and uniform
and cook this until it is nice and thick.
Chris actually went to go get dinner
because the place that we're getting dinner from closes at six,
so we wanted to make sure to get it before they close.
So I'm finishing up our lunch and...
Sorry, I just ate.
Oh my gosh, I know this is not with the fame today,
but we got these at Trader Joe's.
Have you tried these?
These are so good.
I just had a couple of those and I am already obsessed.
So Alexa shared a tip for heating your tortillas
to run it under water and then just put it onto a hot pan
and it'll get nice and soft and it'll feel like a fresh tortilla.
So that's what I'm going to do.
And I'm also going to toast it up a little bit
and then we're going to put the filling into the tacos.
It's going to be delicious.
Chris just got home.
He picked up dinner.
We haven't even eaten lunch yet, but...
We got it, we're ready.
How's it going?
It's going.
The food's definitely really cold, but...
We're going to have lunch and dinner together.
At once.
Oh, it looks great.
Yay.
Love it.
Hey, bear.
Like I mentioned earlier, Chris went to pick up the dinner
and we ended up being a little late in terms of making our lunch.
So we are just going to eat everything together and eat...
Linner?
Lunch.
We're just going to have it all together.
So it's going to be a taco party.
It's going to be fun.
Our plates are stacked, ready to go.
So we have...
Do you want to...
I don't remember what we ordered.
Can you go over it?
This is next week's special at Taquiza.
This is their birria and they have the sauce.
He told me the fish name of it, but I don't remember.
And then this is a...
What is it called?
Is it molita?
Molita.
They were crispier, but we warmed them.
So it got a little soggy.
And then we have tacos.
This is their chorizo and potato.
And this is the al pastor.
We got rice and beans.
What else did we get?
And that's all we got from them.
And then this is the rajas from Alexa that we haven't tried yet.
So we're going to have that.
Lime and cilantro.
And yeah, we're going to dig in.
We're going to dig in.
Cool.
So let's do a taste test.
I feel like...
We'll do this one first.
Yeah, the Alexa's.
This is lunch and then we're going to eat.
I know, it's lunch.
What time is it right now, guys?
It's literally six o'clock.
That is very good.
It reminds me of something.
I think it's the nutmeg in there that...
My mom and I were saying that we can even just like use this as a dip.
I don't know if that's what people do.
But dip some chips in it.
It'll be bomb.
Oh my god, I need to get a 10.
Look at me.
Forgot to mention with our dinner, we're having some cervezas.
Cheers.
Mine's in a cup because we took pictures and we put it in a cup for the photo.
Here we go.
Birria taco.
Special next week.
Check it out.
Is it spicy though?
I'm nervous.
I gotta try it with the sauce.
A little bit.
It's funny when you're like, oh yeah, this is spicy.
You'll think it is.
You're like, oh no, it's not bad.
I can't do it.
I can barely do jalapenos.
What do they make it out of?
That is good.
You gotta try it.
Jackfruit?
You gotta at least try it.
The only thing is if I eat it and it's spicy, I'm not gonna be able to taste my whole dinner.
It's not that spicy.
A little bit of heat.
Oh wow, that's good.
Very good.
It's smoky.
I think that's the sauce.
That is spicy.
My tongue is burning.
So we, before we had this dinner, we hadn't eaten since we had the chilaquiles.
So we're a little ravenous.
Sorry, it's so zoomed in.
But I feel a lot better now.
I also need to drink some water.
Oh my gosh, I'm lighter than you.
I need a tan.
I realized we forgot to plan dessert.
Jasmine's gonna make conchas.
I'm not gonna make conchas tonight.
Oh, I wish we got something.
Maybe we can look something up really quick.
Ooh, I got an idea.
Champlorado.
Yes, we could probably make some.
If we got everything.
I think we, oh, we don't have that.
We should have got some from that sugar.
We could probably use like brown sugar.
I'm gonna figure something out.
All right, so we're gonna close the video here.
I initially wanted to do dessert, but there's no way that I can fit any dessert into my body.
And so I just made us some tea instead.
If you want to check out any of the recipes or the food cart that we visited today,
