In this video, I am showing how to make Ginger Pork stir fry, a very typical home dish in Japan and also common for Bento box. This is very easy dinner dish, it takes no more than 30 min to make.
In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.

Welcome to Taiji's Kitchen. Today I'm going to show you how to make ginger pork stir-fry. So this
recipe is probably not so well known outside Japan but this is a recipe very well known in Japan,
made very often at home and this can also be made for like bento box but also in some izakaya. This
is very easy to make yet very delicious and a lot of people really love this. There are also several
variations of this inside Japan but today I'm going to show you a variation that I like that
I think tastes best so I really hope you give this a try. Then let's get started. Here are the
ingredients for ginger pork stir-fry. So for the meat I'll be using today neck meat but you can
use any other part of the pork but also you can make this with other meat if you can't eat pork
or if you're vegetarian then you can substitute this with tofu and then you have a vegetarian
version. For my recipe I'll be using onion with it but I think the most popular version is without
onion so you can make it without it or also if you want to put in other vegetable then you can
definitely do that too. I'll also be using all-purpose flour for the coating and for the sauce I'll be
using soy sauce, sugar, sake. If you don't have sake you can just substitute with water or white wine
and then a piece of ginger. And I'll be using sesame oil for the frying because I think it adds
good aroma to it but you can just use regular frying oil. Then let's start cooking. First I'm
going to cut up the onion. I'm going to take the top and the bottom off and then I'm going to peel this just regularly.
I'm just going to cut this up in small strips.
That's that and then I'm going to prepare the ginger. So I like putting quite a lot of ginger
so I'm going to take about that amount and peel the skin off. Then I'm just going to grate this with a grater.
You can also be lazy and use a garlic smasher but I think grating it will give out more flavor so
I'm going to grate it. And that's finished. Depending on how much you like ginger you can
put more or less ginger into this recipe. Now I'm going to wet the cutting board slightly to cut the pork meat.
I'm just going to slice this in small strips in a really good way. Now I'm going to coat this
pork meat with a little flour. For that I'll probably just need two to three tablespoons of flour.
It doesn't have to be very heavily coated, just very lightly.
This coating will help one so that the meat doesn't lose its juice but also to make the
sauce creamier. But I think the standard recipe of this is without this coating so that's also okay.
So the meat is all coated, finished preparing. Now let's make the sauce.
To the ginger I'm going to put in one and a half tablespoon of soy sauce.
To this I'm going to put in one tablespoon of sake.
Like I say if you don't have sake then you can use just water or white wine. And to this I'm
going to put in two teaspoons of sugar. If you like a little bit sweeter then you can also put
in three teaspoons. And this is finished for the sauce. So you don't have to do this but
just to speed up the process I'm going to pre-cook the onion in microwave for a minute or so.
Just until it starts steaming then this is good. Then let's start frying. I'm going to heat the
frying pan with medium heat and I'm going to put about a tablespoon of sesame oil.
Once the pan is heated I'm going to put in the onions. So onions are already cooked so I don't
need to fry it too much. I'm going to add a little bit more sesame oil. Then I'm going to start frying
the meat. And then I'm just going to mix it like this. From here you actually don't want to cook
the meat all the way through because in this I'm going to add in the sauce. Right as the meat is
kind of almost getting cooked I'm going to put in the sauce. So make sure you mix the sauce because
sugar may be a little bit on the bottom. So you want to vaporize the water a little bit and then
this is finished. Turn the heat off and then let's put this on a plate.
Oh this is looking so delicious. Let's eat.
Smells so good. Oh I can't wait to eat. Itadakimasu! Oh this is looking so delicious.
Oh this is so perfect.
Oh this is so totally delicious.
This ginger sauce is so totally amazing. So you may notice this is pretty much the same
as teriyaki sauce. The only difference is the ratio and the added ginger. So pork sometimes
have a little bit of odor kind of and this ginger is just kind of taking that away and just give a
little punch to the flavor and this is just so amazing. This ginger sauce is bringing out all
the goodness of the pork. So great. So tasty. And this recipe just matches rice so perfectly.
So perfect to go with rice. And this is also good to go with a little fresh vegetable.
In this case thinly cut cabbage. So this makes kind of like a salad.
Oh that was so delicious. So savory.
Oh that was so totally delicious. So as you saw making this recipe is really easy.
So I really urge you to give this a try. I hope you enjoyed the video. I hope it was
