Japan’s ONLY All-Female Sushi Restaurant - Nadeshiko Sushi
Hi, I'm Yasu from YouTokyo.
And I'm Julian.
Today we've come to Nadeshiko Sushi in Akihabara,
the only restaurant in the whole of Japan
that is run exclusively by female sushi chefs.
Yasu, have you heard of this restaurant before?
No, I actually didn't know about the restaurant
until quite recently,
but I was quite surprised to know about it
because the world of sushi is a very traditional
male-dominated industry,
and I've never actually seen
a single female sushi chef in my life.
Wow, so we're gonna go inside now,
talk to the owner, and try some of their food.
So, let's go.
Yeah, let's go inside.
Yes, so it's not just female sushi chefs,
but we also do all kinds of sushi,
and we're not just a sushi restaurant.
At first, we were just a company
that was running a department store,
but we always wanted to do something new.
We were based on the fact that we came from an art school,
so we were always thinking about
how we could connect art and art
with something new.
At that time, Nadeshiko Sushi was recruiting
for a new opening,
and we wanted to do something like this
where we could connect sushi and art
with a new style.
That's what we wanted to do.
Sometimes, we would get critical feedback,
or we would be criticized for what we did in the past.
When we heard that,
we realized that we still had a long way to go,
and that people around us
were looking at us differently.
It was really hard to figure out
how to overcome that.
Did you ever think about quitting?
Yes, I did.
I was determined to do something.
If I quit,
I would think about the people
who would support me later,
or the people who wanted to become sushi chefs.
I would think,
if Chizuri failed,
and Nadeshiko Sushi ended,
I would think,
if I quit,
I would think about the people
who would support me later.
So I managed to do it.
For example,
there are a lot of things
that you can do on your own,
but if you can connect it to your business,
and learn how to eat
what you want to eat,
I think you can become
a very strong leader.
I heard that
women's hands are warm,
so they don't get cold easily.
How is that actually?
There are two main reasons
First,
when I asked
various male craftsmen
about the temperature of their hands,
they all said
that women's hands get cold easily.
There are also men
who are warmer than women,
and they hold their hands
while cooling the ice.
I do it too.
If you do it like that,
it can be solved at all,
and I don't think
the quality of the fish will change
that much with the difference of 0.xx degrees.
There are a lot of women
who hold their hands while checking slowly,
so I think that
you can solve it in various ways.
I want to make a shop
that is more gorgeous
and artistic,
or a shop that is more classic
and simple.
Each craftsman
has a dream,
so I want to make a shop
that is suitable for each
craftsman
I think that more women
will choose
sushi craftsmanship
as a new career choice.
In the same way abroad,
there is Nadeshiko Sushi
as a new career choice
all over the world.
If we create an environment
where it is easy to work,
we can choose women
and it will be a career
that everyone will long for.
