Hi everyone, it's Fern and in this episode we're going to be making
delicious nettle latte. It's packed with minerals, vitamins and
antioxidants and is a delicious wild alternative to
matcha tea. The first step is to collect your
nettles. I'm gathering mine from my garden today
but you can gather them from any wild space.
Just make sure that they haven't been sprayed with weed killer. You can check
We're going to be collecting stems around 50 centimetres long.
You're going to need to wear rubber palmed gardening gloves
or rubber washing up gloves work really well too.
Now it's time to take your nettles back to the kitchen
and dry them. You can either tie up small bunches
and leave them next to a sunny window or take off the leaves and put them on a
very low temperature in the oven. They're ready when they're dry and
When they're dry it's time to pick off the leaves
and turn them into a powder using either a pestle and mortar
or if you'd like the easy option a blender.
Some of the sting may still remain at this stage
so if you'd like to you can wear gloves. Whichever method you choose
make sure to make as fine a powder as possible.
This is going to make sure that your latte isn't grainy.
We're also going to run it through a fine sieve
to get rid of any of the fibres. Store your nettle powder in a clean
sterilised jar. It should last a few years if it's kept
in a dark cupboard. As well as in latte it can be used in smoothies,
on cakes, sprinkled on salads or used as a flavouring for many sweet
and savoury dishes. You can also buy nettle powder
from online herbalists or health food shops
but it's so much fresher and more satisfying to make your own.
For every cup of nettle latte you'll need one cup of milk,
I like to use coconut, one big tablespoon
of nettle powder, half a teaspoon of cinnamon,
half a tablespoon of coconut oil and honey
or any other sweetener of your choice to taste.
And it's as easy as gently warming this mixture,
pouring it into a blender, making sure the lid's on tight
and pulsing until frothy. The blender will make sure that your milk
turns to a wonderful frothy latte like texture. If you don't have a blender
you can pour your warm milk into a jar, tighten the lid and shake vigorously.
To serve, sprinkle a little bit of your nettle powder
or some cinnamon on top of your latte and head out
into nature to enjoy your wonderful creation.
