This is how we make our opah bacon. First we take the opah bellies and we cut them into strips
roughly half inch by two to three inches just trying to get as much surface area for the brine
and for the smoke. We then take the opah belly strips and put them in a brine of green tea,
curing salt, and a little bit of pickling spice. We leave them in the brine overnight and the next
day we strain the brine then apply a dry rub of brown sugar, salt, and pepper. Then we put
the dry rub bacon in a smoker at a temperature between 180 and 250. We like to use a mix of
mesquite and applewood. It seems to complement the fish best and give it that bacon-y flavor.
After about 45 minutes to an hour and a half the opah bacon is done and ready to serve.
Opah bacon can be used for anything that you'd use normal bacon for.
They're delicious on eggs. One thing that we do is make opah bacon nigiri. We simply cut nigiri
slices against the grain off of the strip of bacon, pan fry them. We like to use duck fat,
put it on a nigiri ball and serve it with a miso mustard sauce.
