I'm going to show you how to make Jammu,
which is an incredibly nutritious health drink from Java, Indonesia.
Something that all of us here in the West can really benefit from.
It's actually very easy and now that citrus is in season and abundant,
it's the best time to do it.
As you can see here, I've got quite a range of citrus
and that's the best thing to do,
is just to get citrus from anywhere you can,
and just put it all into a food processor.
So basically here I've got a range of lemons,
some mayas, some eurekas and also some limes.
I've got a couple of kefir limes,
but not more than a couple because they're so strong,
it can overpower.
And then I've also got plenty of ginger and also turmeric.
And the turmeric is really one of the best things in this
and accompanying that is some black pepper,
because the combination of turmeric and black pepper together
is a key to unlock the most powerful nutrient delivery you can give yourself.
And by doing the pepper and the turmeric together,
it's going to make all the nutrients in the turmeric far more bioavailable.
So you need a high-powered food processor
and we're literally going to put everything in except the sugar,
which are going to melt separately.
So it's really quite easy.
So in goes our citrus, so mandarins,
some of these bigger lemons I'm just going to chop in half
to give the processor a hand.
The limes can go straight in.
So I'm going to do half of this stuff here at a time
and then we'll make two batches effectively
just to not overload this processor.
So that should be about right.
Now I am going to add a little touch of water as well
just to help it move and help extract the maximum amount of nutrients
from the fruit and the spices and also our pepper,
which I've ground very finely with a mortar and pestle first
to make sure that it's well incorporated.
OK, let's give it a really, really good whizz.
OK, so once you've given it a really thorough blitz,
it should be nice and golden from the turmeric and the orange citrus
if you're using oranges or mandarins.
And now what we have to do is grab ourselves a bowl
and into this bowl I put a produce bag.
Now, the reason I've used a produce bag instead of an almond milk bag
is because the holes in this are quite large
and that's what we need to allow the maximum juice to come through.
So I've just got that nicely in there
and I'm simply going to pour it through
and then give it a really good squeeze.
OK, the next step is to take our one cup of coconut sugar and dissolve it.
So I'm going to put it into a nice thick jar
and then I'm going to add about the same, a little bit more, of hot, hot water.
And that is going to turn into a lovely honey-ish syrup to sweeten this jamu.
Give it a little stir
and set aside.
OK, now all we have to do is simply combine it.
So we've got our lovely sugar syrup here with our coconut sugar
and that is going to go into our beautiful juice and spice extract.
And then into a nice jug with a good pouring lid
and into some nice clean glass jars.
Look at that gorgeous golden colour.
Jamu is so delicious and so good for you.
We all need help boosting our immune system, so why not give it a try?
