What's up guys? Welcome back to another video. If you don't already know, my name
is JD and I am the food blogger behind The Little Almond and today I have got
quite a cool recipe for you guys. Some vegan matcha cookies. I love these
cookies because you can actually taste the matcha in them unlike what I feel
other desserts just don't, at least matcha flavored desserts, don't have that
matcha flavor in it. It's just, you just taste sugar. But these cookies you can
actually taste the matcha and it's so good. So without further ado, let's just
jump right into this recipe and get started. Also, as always, you'll be able to
find the full measurements and the recipe on the blog which will be linked
down in the descriptions. Okay, so to a bowl you want to add in your all-purpose
flour, some baking soda, some salt, and then of course your matcha. Then you're
just gonna want to whisk that all together until it is nice and combined.
And once you're done with that, just go ahead and set your dry ingredients aside.
In a separate bowl, go ahead and add in your butter, some brown sugar, and just go
ahead and whisk that all together until you get this kind of caramel like
texture. Next, add in your vanilla extract, some applesauce, and again whisk that all
together until it is nice and combined. Now carefully add your dry ingredients
to your wet ingredients and using a rubber spatula, just go ahead and fold
that all in together until it is just combined and being sure not to over mix.
Next, go ahead and cover it up with some saran wrap or with a lid and chill it
in the fridge for one hour. Once your cookie dough has fully chilled, go ahead
and scoop out about two tablespoons of it onto a baking tray. And if you want,
you can roll it into balls. If not, just go ahead and cover it up with some
saran wrap and stick it in the freezer for at least one hour.
After an hour has passed, go ahead and take your cookie dough balls and roll it around in some
sugar. This is just about half a cup of sugar. I didn't use it all, but just
enough to coat all of your cookie dough. Next, just bake it in the oven at 350
degrees for 10 to 12 minutes. Once it's done baking, go ahead and let it cool on
the tray for about 10 minutes before transferring your cookies over to a wire
rack. Now these cookies are already good on its own as it is, but if you want it
to be a little bit extra, you can go ahead and spread on whatever you want
onto these cookies and make some matcha cookie sandwiches. I used this white
chocolate coconut spread. It is vegan and is so good.
And there you have it guys, some vegan matcha cookies. Very easy to make. Again,
the full written description and the measurements are on the blog, which will
be linked down in the descriptions. Other than that, I hope you guys enjoy
this recipe. If you did, go ahead and leave a like, subscribe, share, leave a
comment. I love it when you guys comment down. I read them all. If you have any
questions, feel free to ask. Other than that, I will see you guys next week for
another recipe. Take care!
