Hey guys, it's Dani and this is an on the fly video because here's the deal, after posting
my how to freeze bananas and my better than banana ice cream the last couple weeks, I
had a reader on my blog, cleananddelicious.com, Karina, leave a note saying that she uses
frozen bananas to make frozen mint chocolate chip ice cream and I thought this was brilliant,
I absolutely had to share it with you guys.
So here's what she does.
She takes two frozen bananas, pops them into her blender, then a big handful of spinach,
and she says 40 grams to be exact, but it's really a big handful if you didn't want to
measure it out, pop that in, then a couple tablespoons of coconut milk, and I do this
because I need a little bit of liquid to help blend it up.
You could use soy milk, almond milk, cow's milk, any liquid you had on hand there would
do the job.
You could even use a little water.
And then just a quarter teaspoon of peppermint extract.
So the green from the spinach gives it the color and then this extract gives it that
minty flavor.
Just a quarter teaspoon.
Okay, pop on the lid, blend it all up, and if it gets stuck just get on in there and
mix it around a little.
If the bananas are really hard and frozen, it's a little harder to blend up, so if you
can take them out of the freezer, you know, an extra few minutes before you do this, you'll
be doing yourself a favor.
Once the bananas and the spinach have all blended up and you've got this nice thick
mint ice cream, then you're just going to toss in like a good heaping tablespoon of
chocolate chips and blend it up for another 5-10 seconds.
Okay, then once you've got your chips incorporated, you're ready to dish up your mint chocolate
chip ice cream.
And check this out.
Thick, it's creamy, it's green, it's minty, and it's got chocolate chips.
And my daughter ate an entire bowl of this for breakfast today, because I've made it
like four times, of course, since I found the recipe.
Check that out.
Mmm.
It blows my mind.
I'm telling you guys, I'm going to have to try this one.
How cool is that?
I just had to share this one with you guys.
I'll see you guys next week back with another quick bite.
Take care.
