Easy Avocado + Tomato Salad | Clean & Delicious

Hey guys, it's Dani and today I am sharing a crazy simple, insanely delicious, chunky avocado salad with fresh cucumbers and tomato. Now this has become one of my family's favorite summer salads and I just could not wait to share it with you guys. So here's all you have to do. Into a large bowl goes one English cucumber that I quartered and then cut into bite-sized chunks. Now remember guys this is a chunky salad so everything's going to be cut into nice hearty bite-sized pieces. Then I've got three small tomatoes that I've cut into chunks as well. Two ripe avocados. Get the pit out, scoop the avocado out, and cut it up. Half of a red onion and a quarter cup of fresh chopped cilantro. If you really don't like cilantro you can also do parsley here but the cilantro is absolutely delicious. Then in a separate bowl I am going to mix together two cloves of crushed garlic, the juice from one lemon, we're looking for about two tablespoons of lemon juice here, one tablespoon of extra virgin olive oil, and some salt and pepper to taste. I'm gonna whisk that all together, gently pour it over the top of my salad, and then toss this together until everything is lightly coated in that bright citrus vinaigrette. Now this salad is so simple it couldn't be any more delicious. It's beautiful alongside any type of meat or fish on the grill. You could serve it with some fresh chips or some veggies or simply have it as a light lunch on its own with an egg cracked right over the top.
