Peace be upon you Bohemian family.
I hope you're having a very delicious day.
It's Mino and Amina.
We are in Gabs, Tunisia.
Gabs is a charming city in the south of Tunisia.
That is known for its fresh date juice and its unique barbecue.
Today we're gonna try goat and chicken kebab, spicy octopus couscous
and the authentic local dishes of Gabs.
Are you ready?
Peace be upon you.
How are you?
I'm good.
Thank god.
This is palm.
Our chef prepares goat skewers using palm branch which are not easily burned.
This is a kilo of palm.
Do you sell it for a whole day?
Yes, I mix it and sell it.
Do you have everything in one skewer?
Yes, I have everything in one skewer.
Ok, one kilo.
A little bit of salt.
What is this? Zatar?
No, it's rice and tomato sauce.
The pit master is now ready to go.
And our chef is ready to roast a small batch of skewers for the early arrivals.
He puts all the skewers into the pit and close the marble lid on it.
The sealing of the pit with a watery dough seems to be a Tunisian speciality.
One hour from now?
Yes, one hour.
Peace be upon you.
How are you?
While the goat meat was cooking in the pit,
we went to a nearby shop to taste unique date juice, a local speciality of Gabs.
Is this legume?
Yes, this is legume.
This is legume which is juice from date palm.
It's so sweet!
Is this sugar?
Yes, 100% sugar.
It's unbelievably sweet and refreshing and I can taste the date.
Yeah, I can taste the palm date from this juice.
To collect this precious palm juice, the master need to climb along the palm tree.
Then cut the palm heart at the top and collect it little by little.
How much for 1.5 liters?
5,000 AED for 1.5 liters.
Do you want to drink?
Look at this color!
It's wonderful! I want to drink this juice every day.
Where is it from?
It's from Bili.
Do you want to take a picture of this tea?
Yes, I want to take a picture of this tea.
Peace be upon you.
Is this Kahla?
Yes, it's Kahla.
Wow, it's amazing!
Is this Kassa?
Yes, it's Kassa.
This black tea is just like Espresso.
So dark and so rich I guess.
It's almost like a stimulant.
Open your eyes!
The aroma of the meat and the rosemary is almost teasing.
Now it's time to make a second batch, a little more than the first one.
This is 50 kg of meat.
It's good!
Let it be declared that the meat party is on!
Is it cooked well?
Yes, it's cooked well.
It's beautiful!
It's important to be careful.
Thank you.
Enjoy your meal.
Wow, look at this!
The aroma of rosemary and the slightly tart spicy flavors of tomato sauce combine very well.
Tender, juicy, smoky and slightly spicy.
I love this Tunisian grilled salad.
I love smoky flavors so this is definitely my favorite Tunisian food.
It's Tunisian braised beef Glaya.
It's so mild in flavor and tender.
It's like Moroccan tagine.
It's a spicy lamb stew Camonia.
Liver and meat in a spicy tomato sauce.
Look at this huge skewer.
Every skewer contains one kilogram of meat.
Look at this juicy lamb skewer.
Tunisian spicy paste Harissa.
So tender and juicy.
This is gonna be rocking!
Smokiness opens smokiness!
Wow, Tunisian meat party!
Whenever you have grilled meat in Tunisia, don't forget to drink lemonade.
You can find this vanilla flavored lemonade almost everywhere in Tunisia.
We are on the way to the center of Gabis to have a taste of more local dishes.
I entered this place because of busy vibe and realized this place specializes in Keftash.
It's a humble combination of roasted salad, Harissa, fried egg, cabbage salad,
carrot, tomato, parsley and french fry.
Let me mix the Keftash.
Keftash is a traditional Tunisian dish and a popular street food.
Keftash are usually made with a variety of fried vegetables.
But this restaurant use fresh vegetables instead.
And when they are combined with a half cooked fried egg,
the result is a humble but enticing Keftash.
This version is much lighter than the fried version and it's perfect for after barbecue.
If you're ever in the south of Tunisia, be sure to buy a bunch of dates.
Give me a kilo please.
We got a tip that there was an interesting seafood restaurant near the port.
So we made a quick trip to the place.
This is the restaurant's signature dish stuffed squid.
It is stuffed with rice, barley, charred squid tentacles and Harissa.
And it looks very nice.
Oh yes!
Look at this stuffed squid.
The sweetness of the tender squid and the spicy filling
combine to create wave of ocean taste in my mouth.
This food is like Moroccan Tehan.
In Morocco, people use beef spleen to stuff rice and spices.
But in Tunisia, people use calamar, squid.
This is octopus Berkouche.
Berkouche is the big brother of couscous in terms of size.
This restaurant serves Berkouche with octopus and fava beans.
And it's a famous dish of the Amazigh people from the Maghreb region.
This food is pretty much like couscous.
It's slightly nutty, savory and best of all I love the tangy texture of the Berkouche.
Tastes like couscous but it's spicy.
I've never tried this kind of spicy couscous.
