While millions of visitors happily savour Japan's fish- and meat-heavy cuisine, options for vegetarians and vegans can be harder to find. Now, Tokyo and other cities are on a mission to show Japan's renowned gastronomy is not off-limits to those who don't eat meat.
Basically, we noticed that most of the other izakayas that are already there,
they don't really have any options that cater to vegans or some other people with certain food restrictions.
And so we really wanted to create a place where both people who are vegan and people who are not can come together and enjoy the food.
I don't know how it was previously, but pretty limited comparing to the states.
Even if you come to Tokyo and want to eat delicious food,
even if there are a lot of Michelin-starred restaurants, there are a lot of people who can't eat.
That's lonely, isn't it?
I wish there would be more restaurants like that.
Basically, people who are vegetarian want to come and participate.
There are also people who realize that there is philosophy and philosophy in the background of food.
There are people who want to know that kind of thing.
