Hello everyone, today I'm going to show you a classic of the Italian cuisine, spaghetti carbonara.
We only need three ingredients for this, parmesan cheese, eggs and pancetta.
We're going to use bacon this evening.
Actually we need four ingredients, spaghetti of course. Let's go!
When the water is boiling, we put a lot of salt in the water.
I always use 10g per liter. Here we have 5 liters, so 50g.
It's important to put enough salt in the water, otherwise the food will taste like nothing.
Now we put the pasta in the water.
Stir it with a fork or a spoon, so the pasta will separate.
And let it continue to boil.
While the pasta is boiling, I already cut the bacon.
As I said, normally you use pancetta, but I couldn't do it today.
Normally you don't need any extra fat, because there is already a lot of fat in the meat.
If it's a bit dry, just add some olive oil.
We leave it in the pan for a while.
While the bacon is cooking, we can grate the parmesan cheese.
If you like, you can also use a bit of pecorino.
You can also mix both, depending on your taste.
And don't be stingy with the cheese.
The bacon already looks good.
We can put it aside.
I always use whole eggs for my sauce.
Many recipes are only with egg yolk, but it's not necessary.
And if you consider the origin of the recipe, it's an old recipe from wartime.
They certainly didn't throw away the egg white.
And it tastes great with the egg white.
Now we add the cheese.
A lot of pepper, don't be stingy with it.
Mix it well.
And that's it.
I don't add any more salt.
Because the bacon or pancetta is already quite salty.
And usually salt is enough.
If it's not enough, you can add a bit of salt afterwards.
But here it's best without salt.
That's how it looks when it's done.
That's the carbonara.
An important question. When is pasta al dente?
Very easy. You have to try it again and again.
If it still has a bit of bite.
It shouldn't be soft.
You shouldn't lick the pasta.
You should have something to chew.
Depending on the type of pasta, it can take 5-10 minutes.
It's much more important that the pasta is boiling.
I take a bit of the pasta water for the bacon.
That's for the sauce.
Maybe we need a bit more.
You can change that depending on the taste.
The pasta is done.
It goes in now.
And is taken from the heat.
It's important that I mix it from the heat with the bacon.
Or the pancetta.
I let it cool down a bit before adding the egg mixture.
Often it's mixed in seperate bowls.
But that's not necessary.
Let it cool down a bit. It doesn't take a minute.
Because it's from the heat and the pasta brings some water,
it cools down a bit.
Mix everything well.
And now you can add the carbonara sauce.
As you can see, it's going to be really creamy.
The egg mixes well with the pasta.
If you want it more liquid, add a bit more pasta water.
But that's perfect.
Mix it well.
And the spaghetti carbonara is done.
You can serve it like this.
Just put it on a plate.
Turn it a bit.
Add some fresh parmesan on top.
And that's it.
I personally like it with some parsley.
Many purists will probably scream now.
But I think it's more beautiful and it tastes better for my taste.
And a bit of green has no harm after all.
There.
That's how fast you can make a delicious spaghetti carbonara.
Enjoy your meal.
