Hey friends! I'm Heather Pace and today I'm sharing three healthy and easy snack
recipes that you can throw together in a jiffy.
Oh my god, jiffy. That is such an old word now. I sound really old.
Anyways, first I'm going to be doing a one ingredient baked cracker with
toppings, then chocolate coconut covered rice cakes.
Sounds kind of funny but it's really really good.
And then chocolate almond butter stuffed dates. So yeah,
really really yummy. Let's hop into the kitchen and do it!
Here are the ingredients for my rice cakes. It's really simple, only four
ingredients. I've got some plain rice bins. You can
use any ones of your choice. Dark chocolate chips,
coconut flakes, and some coconut butter that I'm going to
melt down. Here's my bowl set over a pot of hot
water. You don't want the bowl to be touching
the water. Set over low heat. I'm going to add in some
chocolate. I don't know, about a cup-ish. You don't need to measure. You're gonna
need a parchment paper lined tray. And guys, you can reuse your parchment
paper. I've only used this for chocolate, so don't waste. And here is my chocolate
melting up nicely. Okay, I've got
some rice cakes and I'm simply going to dip the rice cake in. Use my
fork. Flip it around so that both sides are
coated. Because we go all the way around here
when it comes to chocolate. So carefully lift that out like so.
And then on to your parchment. Okay, here they are. The chocolate has
hardened. They've been in the fridge for about eight minutes.
And then I have my melted coconut butter here
ready to go. And then I decided that I'm going to add some goji berries on top
too because it's going to be so pretty and add
extra nutrition and flavor. And I'm just going to drizzle this
on top.
If you notice here, I left one plain. I'm going to do a peanut butter one here.
I've got some peanut butter here. Natural peanut butter.
And I'm simply going to drizzle this on top.
Oh yeah baby. Peanut butter lovers. You're gonna like this.
So now I've got some chopped peanuts. I'm gonna sprinkle these on top.
An extra drizzle of chocolate.
Oh my god.
Insane. So it's the next day and I'm finally trying the peanut butter rice
cake. And I'm super excited. First bite. Here we go.
Can you see that? This is heaven guys. So easy right? Next I'm making
one ingredient crackers using these sprouted grain tortillas. These are the
Ezekiel ones. I really like them. You could do brown rice,
tortillas, whatever you like here. I'm simply going to slice this up
into triangles. You can do really honestly any shape you
want. I'm going to place these on my baking
sheet and I'm going to bake them at 350 degrees
for I think about 10 minutes. I just pulled these out of the oven. They
ended up baking for 14 minutes. I checked on them twice
along the way. So I'd say 12 to 14 minutes.
And they are nice and crispy. But hot. I'm gonna let them cool down
before I talk. For my toppings I've got some sliced avocado,
cilantro, cherry tomatoes, and hemp seeds. Oh and I will add a pinch
of salt. So that's it. Really simple. So I'm gonna
simply start by adding my avocado.
So there we go. And now I'm gonna add some tomato on top.
Sprinkle my cilantro. Hemp seeds. Going in for one of these
crackers. Can you hear that crunch?
They get so crunchy without having to add any oil or anything.
Next up chocolate almond butter stuffed dates or
ingredients. I've got my jewel dates here. These are starting to get a little
bit dry but they're still okay. Raw almond butter or roasted. Cacao
powder. Maple syrup. This is optional. Fifth
ingredient. Some Himalayan or sea salt. That is it.
Start by halving the dates. So you want to pull
them apart like this. Right in half. Pull this pit out.
And then just kind of open each half up a little bit.
That's our little boat for our filling. Next we're doing the filling. So I've got
some almond butter here. I'm going to take a nice big
spoonful. Put it in to my little bowl here. You're not going to
need too much. I'll take kind of like
a spoonful and a bit. A little pinch of salt.
Like that. Because salt really enhances all the flavors.
And then about a tablespoon of cacao powder. Because it's lumpy I'm going to
sift it through my sifter here. Using the spoon
to push it through. About a tablespoon of maple syrup.
Normally I would just eyeball this. I'm trying to do the measurements just
for you. I've got my handy little whisk and I'm
simply going to whisk it all together.
So here we have it. Our yummy chocolate spread.
So of course the best way to know if this is good or not is to taste it.
Since no one else is going to be eating this I'm allowed to just lick from the
spoon. Oh my god so good. So rich and chocolatey.
And the sweetness is on point. So if you want it to be a bit more bitter
or less sweet then add more cacao powder. More sweetness. Add a little bit more
maple syrup. And you are good to go. Okay so I'm gonna
start stuffing my dates. Just take a little
spoonful like this. Spread it into each date half.
It could be a little bit messy. That is okay.
I need a little bit of crunch so I'm gonna add some chopped almonds on top
as well. Now I'm getting into the dates.
The date is super chewy. The spread is really creamy. And that little
pop of crunch on the top from the almonds. They are so good.
Oh my god. Goji berries stuck to my teeth.
