I am going to make an Italian steak and eggs.
First, I was going to go Mexican or Southwestern.
And I was like, ah, I do that all the time.
So I'm going to go Italian.
I'm making cacio e pepe scrambled eggs
with salsa verde strip steak.
First thing I'm doing is I'm making
a butter with tomato powder.
It's just dehydrated tomatoes.
And it has a very intense flavor.
And some Calabrian chilies.
Bobby, I'm so surprised to see you use chili over there.
Shocker.
Now, so how are you doing your steak?
So here's the deal.
So basically, I sear it, but it's raw inside.
Then I slice it.
And then I'm going to do a salsa verde,
like an Italian green sauce, butter on top of the steak.
And I put it in the broiler.
The butter melts, finds its way through the crevices,
and then finished cooking the steak.
Strip steak is kind of heavy for breakfast.
It's more like we're moving toward dinner.
Bobby, you're scrambling your eggs, right?
Yes.
You doing anything to them?
Cacio e pepe.
So you're adding pecorino and pepper?
Correct.
Look at those guns, when he starts grating that cheese.
He likes hearing you say that.
That's why he wears the shirts a little tight.
Oh, I love it.
I love it.
So I have ciabatta bread.
I'm going to slather that with a little bit of olive oil,
salt, and pepper.
The butter goes on just basically
right before I plate it.
I'm going to make salsa verde butter.
Going to have rosemary, and tarragon, and oregano,
and garlic, and anchovies, and capers.
What are you doing over there, Bobby?
This is the flavored butter for the steak.
Oh, so he's got two butters going.
Does this dish come with a defibrillator?
Yes, it does.
Clear!
And he's having trouble getting the thing off.
Look at this.
Just bash it on the table, Bobby.
I don't want to do this anymore.
This is fun.
Yeah.
Isn't it?
I'm your worst nightmare.
I mean, Bobby, you thought I was bad.
Katie, shut up.
I got to tell you, that doesn't look pleasant.
You have to wait.
Oh.
So we have the steak sliced up, put the salsa
verde butter on top of it.
The butter's going to melt, cook the inside of the steak,
drop down to the bottom of the pan,
and then that's going to be the sauce.
Usually, I do like fried eggs, because people
love the runny yolk.
But I also like to make really creamy scrambled eggs, too.
So I cook my eggs with some creme fraiche
and some whole butter until it just
starts to form like a custard-like texture.
Plating the scrambled eggs, and then I'm
topping it with some black pepper
and some pecorino cheese.
That's the cacio e pepe.
Then I have the steak in salsa verde butter.
A couple of pieces of the tomato and Calabrian chili toast.
5, 8, 7, 6, 5, 4, 3, 2, 1.
You got it done.
Congratulations.
Beautiful.
I just think it's a very homey dish.
You know, it's like it's toast, steak, and eggs.
