What's up guys? How are you guys doing? I hope you're well. Guess what? Today we're going
to be learning how suya is made. Suya is such a popular meat around here in Ghana. It's
a bit of a street food snack you find in the night life around Ghana. So we're at the butcher's
place in a place called Trilafu in Ashymon. This is where they buy the meat in bulk and
basically we're here to purchase some meat. Haruna, who does this for a living, is going
to take us through the process of making suya. So this is the meat you use for the... Yeah,
the leg. This is from the leg of the cow. So how much do you buy this whole thing? That one?
Six million. I buy it for six million. This is my people's bread. So you're from Nigeria? Yeah,
my country people. Oh, okay. I didn't know there were so many Nigerians here. Why do you buy a lot
of fat? The fat? Yeah. So you're not going to use that for this? No, no, no, no. It's not fat like
that. That one is breast. You see? Like this. The cow is breast. So all the market people come
and buy from here. What's the most expensive part of the cow? Which part is very expensive?
The leg. The leg is the most expensive. My senior brother did that. Oh, okay. He did
supply for Accra. For Accra? Oh, okay. Now the meat, the cow, it's more expensive. Everything
is more expensive. It's true. It's very true, yeah. So before, how much were you buying this?
Which one? That one? Yeah, before. Before? Yes, before it became expensive.
I just buy maybe four million. Four million? Yeah, four million. Now it's about two hundred
thousand.
So if the meat is bad, what do you do to it? If it's not good, what do you do?
Thank you.
So Haruna slices through the meat to make it as flat as possible
and then he makes these lines through the meat as well and I suppose that's to allow the marinade
to penetrate the meat as well as allow the cooking time to be shorter.
Thank you.
All right, you guys. So Haruna is done purchasing and cutting the meat and we're going to take it
to his house now and marinate and prepare it. I'm going to be talking through some of the
processes because Haruna mainly speaks Hausa, which I don't understand. So,
yes, we're going home now. Okay, yeah.
Hey guys, so Haruna and I are home now. You said this is Ashaima Night Market? Ashaima Night Market,
Zongo Night Market. Zongo Night Market, so that's where he lives. So we're going home to start
preparing the meat now. Okay. Hey, are these all your people? Hey, all my people. Wow, you're popular.
Do they all sell suya as well? Yeah, yeah. All of them sell suya? Yeah, yeah.
Fine, thank you. You see, these are all my people. Oh, they're all your people.
You see, that one, it's the same meat. Oh, okay.
Oh, okay. You do it here? Yeah, I do it here before. You take it from Tijuana? From Tijuana.
This is your house now? My room is that. Your room? Oh, okay.
Okay, okay. So, you sell yours here? You sell them for? Do you take it somewhere?
The night market here, no, the roadside. Now, nobody know sell them for here.
Nobody sell, you just start it here and take it somewhere?
Oh, so you have guinea fowl? Yeah, they say guinea fowl is safe. Oh, okay. Where do you buy that? Do you buy that from where we were?
They are the same meat and liver and guinea fowl and intestine. Oh, okay.
Haruna is about to put the meat on the fire.
So, how long do you cook it for, Haruna? Yeah. How many minutes do you leave it on?
Okay, maybe 30 minutes. Oh, 30 minutes. On one side and then you turn it? Yeah, oh, one side you go this 20 minutes.
20 minutes and then you turn it, oh, okay. If you fire the 20 minutes, I go 10 hours. You go 10 hours, okay, okay.
Another 20 minutes, I go. So, what part of Nigeria are you from, Haruna?
You say? What, which, where in Nigeria? From Nigeria, Sokoto city, north side.
Sokoto city. Yeah, I'm from north side. North side, oh, okay. When did you move to Ghana? What year?
I come here to belong. How long? Yeah. Like how many years? More than 25 years. Oh, really?
Your mom is in Nigeria? Yeah, yeah. Oh, okay.
Oh, okay. So, you like Ghana more? Oh, I do like Ghana more. Than Nigeria. Why? I do my everything, I do my everything for here.
I do my market, everything here. To be here, I come here, the time I come here,
I don't grow seeds. Oh, you must grow. My father, he take me come here.
Oh, your father brought you here. Oh, okay. So, and where's your father now? Now, he died. Oh, okay.
So, what's, what's in this one? That one, it be salt, and spices.
So, what kind of spices do you use?
Pepper, okay. Is that curry powder? Yeah. Curry powder. Curry powder.
On top of it, okay.
Now, I finish. You finish, that's okay.
You put some on the other side as well? Yeah, yeah, I go put the other side.
Oh, okay. Now, you're adding some oil. I put here, small, fry to. Fry to, okay. Yeah, but tough. Okay.
It may be easier. I can tell, in this hot sun. It may be easy. It may be easy for her.
You make good money from it. It's a good.
It doesn't take too long.
So, Haruna, you have to stand by the fire, till it's finished.
Ah, wow.
Sometimes, I go feel, like today, the meat, the fat is too much. It's too much, ah.
Like, sometimes, I take this one, the one, you know, get fat like this. That one, I go feel, go sit down. Sit down, ah.
That one, I go feel, go sit down. That one, the fat is too much. The fire, you know, see the one, the fire. Yes, yes, yes, yes.
Oh, okay. That's why, I don't go feel, I don't go feel sit down like this. You leave it, ah, okay. Otherwise, it'll burn.
So, was your father selling Suya, um, this one? No, my father, he don't do that work to me.
What work does he do? They do supply. Supply, oh, okay.
They come for the truck, for the white people. Oh, okay, ah.
For the white people, they take it home. Oh, okay. So, you were selling meat, but you were supplying it to them. For the white people, I supply. Oh, okay, okay, okay.
So, why didn't you do that? Why did you choose this one? This one?
That one, the, my senior brother, um, build that one. Oh, okay, your senior brother does that one.
My senior brother, I come with him for him. Okay. He build that one, you see. Okay.
Me try to learn now. You, oh, okay, okay. Try to learn and learn that.
Do you only use cow, Haruna, or you use other meat? Do you use goats, or? Sometimes. Sometimes, you can use goats, oh, okay.
Oh, okay. Today, now, this week, the truck, it's not, you know, this thing, it's hard. It's hard, oh, okay.
So, when you. The cow, it's short. Ah, okay. Everything now, you see, the place is the front.
The border, they bring for the, what do you call them, Burkina. Uh-huh, Burkina, okay.
Now, everything is hard. They don't have a lot of cows here.
So, when you use the other animals, do you use the leg as well? Like, if you use a goat, do you use the goat?
No, I go feed the full cow. The full, okay, the full goat. Full goat. Ah, okay, and the sheep too? Yeah, the sheep too.
It's the same. The full one, because you don't see the thing, it's very big. So, who taught you how to make this, Haruna?
Did somebody teach you how to make suya? My boy said, you come here, you're not to belong.
Oh, okay. And they just, you just watch, and then you learn. So, it was the same for you as well? Yeah.
So, how many years have you sold suya? Now, I reached
27. Hey, so suya, hey. Our first, our first 27. Hey, wow. I have to belong for inside. Sometimes, I go feed, leave, go, my whole time.
And then, so when you go home, you don't sell it there? I don't sell it there. You don't do it there?
Yeah. So, will you be able to sell everything today? Oh, today, it's not plenty.
It's not plenty, yeah? It's not plenty today. So, you sell more than this? Today, it's not plenty.
Sometimes, I bring plenty of guinea fowl and intestines. Okay. And liver. Today, there's no liver.
There's no liver. Yeah, yeah, yeah. So, I bring plenty of meat, more than this one.
And you sell everything? Yeah, I have to sell them. And you go every day? Monday to Sunday?
Wow.
Do you do people's parties and things like that as well? When someone is having a party and they
say they want you to come and do the meeting? Sometimes, I will go. You could go? Yeah, sometimes, I will go if you call me.
Oh, okay.
Oh, okay. So, is this better money than kebab? You make more money from this than kebab?
Yeah, yeah.
In Nigeria? Oh, okay.
Oh, okay.
Okay, okay, okay.
Six. Six children? Oh, okay.
I wonder you have to make a lot of money now because all the children and two wives.
Down there.
The meat looks so good. Like, it's not even done. It looks really good. If you guys have a party,
come and buy from her.
And what do you call it?
They call them, some people, they call them palangu. They call them chachanga.
Suya. Suya, yes. That's what I call it, suya, yeah.
You see that one? That one is good. It's good, okay, okay.
Oh, yeah.
So, the meat is sort of, like, almost cooked through. Like, it's just like a tiny, tiny bit
of uncookedness to it. That's the word. So, basically, once he goes to his stand where he
sells it, that's where he's going to cook it all the way through. And that means you get,
you buy it hot and fresh, you know.
Bye-bye.
So, this is the meat he's made. It's, as I said, it's semi-cooked. It's not completely cooked.
The flavor is amazing. I had a bite earlier on, but it's still a little bit tough because it's not
perfectly cooked yet. So, once he cooks it at the stand where he sells it,
then it's going to be perfectly cooked. I just wanted to try and come up with you guys
a flavor. You would think he marinated it for days and days, but
he just marinated it whilst it was on fire. It's delicious, guys. It has that charcoal
flavor, that suya flavor, a little bit of spice, a little bit of umami from the Maggi cubes.
It's amazing. It's very, very delicious. Suya meat is delicious. So,
whenever you get the chance, make sure you try it.
You can hear me. It's super loud here. So, we've made it to where he sells the suya
and he's going to basically warm it up inside the cellar. The process of making it is very,
very simple. I said sometimes so that you can see what I'm trying to say.
Somebody's selling something in the greenhouse.
So,
Sometime I will reach 11.30pm
Do you pay to stand here?
You pay? Who do you pay?
No, no, no
You don't pay? It's free?
Sometime...
Now, you know they come
The one that bring card, receipt
Now, you know they come
I know they come
But before you used to pay?
How much were you paying?
One CD
How much? One CD every day?
Now, it's stocked
It doesn't come anymore?
Oh, okay
Do you make the suya powder yourself?
Suya powder?

Do you mix it yourself?
Or you buy?
