If you're stuck in a cold, dreary city,
or you don't have access to an outdoor grill,
but you're still craving that delicious smoky flavor
you get from charcoal grilling,
this tip is gonna change your life.
The secret is this, Japanese charcoal.
This is sumi.
They burn way hotter than everyday charcoal.
They're actually designed to be used
on tabletop Japanese grills,
but my hack is using a cast iron skillet.
So the first thing I need to do
is I need to take my charcoal to an open flame,
so I'm gonna use the stovetop,
and I'm gonna get them white, hot, and glowing.
Once they're kind of white and glowing,
you're gonna flip them,
and you want them to look the exact same way
on the opposite side.
All right!
My coals are white, hot,
so I'm gonna go ahead and keep my cast iron skillet
on a burner because it's hot,
and I'm gonna go ahead and take a heat-proof cooking rack
and place it right over the top.
I'm gonna make some sausage and peppers,
but of course you can make whatever you'd like.
A toss.
I mean, this is incredible.
I am indoors.
There is virtually no smoke.
The only smoke that there is
is what's coming off my sausage and peppers.
Got my peppers.
I got my onions.
And just like that,
with a little help from my cast iron skillet
and Japanese charcoal,
I have all the benefits of outdoor grilling indoors.
