Hey, it's Mark Wiens. I am in Saigon, Vietnam, and I am sitting down for a very popular street food snack called Banh Cot.
It's like a little kettle cake, kind of like pancakes.
She has a little griddle where she pours in a batter and then puts in a bunch of oil,
and then tops it with, I think, some mung beans and some little shrimp.
And they're little beautiful, little bite-sized pancakes, crispy on the edges.
And this is just an awesome market environment.
I'm just somewhere lost in a market and about to enjoy Banh Cot.
So it's served with a huge pile of vegetables.
So I'm just going to grab some vegetables, and you're supposed to just take some lettuce, some herbs, and some vegetables.
So there are two different types. One is plain, and then the other one, I think she topped it with a sauce.
I think it is like coconut milk or something.
I'm seeing other people, they grab the pancake, the little kettle cake, and dip it.
Maybe dip it into the sauce and then stick it into the...
I guess there are a couple of different methods.
And then you can just kind of wrap it up like a little package and dig in.
Mmm.
Those little pancakes are like rich and creamy and crispy at the same time.
And then all those herbs give it that really fresh touch.
I can taste that little shrimp. That's very good.
Mmm.
Okay, let me try again.
And I got another little herb package.
And now I'm going to try one with the coconut milk, I think.
And wrap this guy.
And then dip it into the sauce.
That should work.
It almost tastes like creamy mashed potatoes with crispy edges wrapped in herbs and leaves.
And then flavored with the sweet fish sauce and chili.
It's really good.
This is a very fun, fun food to eat.
And I'm too lazy to peel off these herbs, so I think I'm just going to eat them all.
Mmm.
That's wonderful.
We were sitting on prime real estate on those chairs, so I had to eat pretty fast
and couldn't explain everything on video.
But anyway, that was a great mixture, combination.
I really enjoyed it, and I think I much prefer Banh Krok over Banh Xeo, which is the...
Banh Xeo is the huge crepe.
I really prefer these little guys better.
But anyway, this is fun dining, very entertaining atmosphere,
and yeah, Vietnam is such a wonderful country.
