Hi guys, it's Olga.
In my last video, I showed you how to make a healthy vegan mayo.
Not gonna lie, the main reason for that video was because I wanted to make today's recipe
for potato salad.
I love potato salad.
We make it all the time for holidays and special occasions and this is my healthy version
of potato salad but do not think that it's not delicious because it is.
But I know you guys are going to love it so let's get started.
For our amazing potato salad, we're going to need potatoes.
I'm using the red skinned potatoes today.
We'll also need celery, carrots, peas, onion, garlic, some fresh herbs.
I'm using dill.
I think it works perfectly in this recipe.
Vegan mayo.
This is my homemade mayo.
I showed you how to make it in my last video in case you haven't watched it.
I'll put the link for you in the description and at the end of this video.
And to season, salt and pepper.
First you're going to wash the potatoes really well.
I'm actually going to keep the skin on.
It has quite a lot of nutrients in it so there is no reason to peel it.
Cut the potatoes into bite sized pieces.
It's up to you how big you want them to be but do try to make sure that they're relatively
similar in size so that they're cooked evenly.
Usually when you make a potato salad, you boil the potatoes.
I actually prefer to steam mine instead.
It takes the same amount of time but the potatoes don't lose as many nutrients as they do when
you boil them.
So now that you've got all the potatoes in the steam basket, we're going to steam them
for 10-15 minutes.
While our potatoes are cooking, we're going to cut the rest of the ingredients.
Celery, carrot and onion and combine them in a large bowl.
As always, I'll have the exact measurements for this recipe posted for you on my website
at fablunch.com.
To our chopped vegetables, let's add our peas.
These are just frozen peas that I defrosted.
After 10-15 minutes, check if your potatoes are ready.
I usually use a fork or a knife.
The potatoes are ready when you insert the fork and it easily goes right in.
You're going to let the potatoes cool down for a few minutes before we combine them with
the rest of the ingredients.
So now is the perfect time to make the dressing.
In a small bowl, add mayo.
Then let's mince a few garlic cloves.
You guys know how much I love my garlic.
Finally, add salt and pepper and give everything a good stir.
After our potatoes have cooled for a few minutes, let's add them to our chopped vegetables and
mix everything together with the dressing.
I like to use a spatula to mix this salad so that the potatoes don't break on me.
Then add your fresh herbs and give your salad a final stir.
And our potato salad is done!
Technically, you should put the salad in the fridge for a few hours before serving for
it to cool completely and for all the flavors to come out.
But I also like the salad when it's slightly warm, so if you're like me and you don't want
to wait, just grab yourself a bowl and try this deliciousness.
I'm going to store the leftover salad in my small FabLunch containers.
This weekend, my family and I are going on a picnic and we're going to bring the salad with us.
I like having the salad in separate containers so that each of us gets our own.
Well, if you love potato salad as much as I do, please give this video a thumbs up.
I would really appreciate it.
