Hi everyone, it's Raquel of Raquel's Carbon Cuisine
and today's recipe is going to be a delicious
carbon treat known as coconut drops or rock cake or coconut bun
but this is just absolutely delicious. So for this quite simple recipe to a
bowl I'm going to add one and a half to two cups of freshly grated coconut
which is the main ingredient in this beautiful recipe and you want the
coconut to be freshly grated in order to get that
great flavor but whatever is available to you would work
just as well. Now in with two cups of flour and I'm using baking flour
then I'm going to add a half a cup of sugar, a quarter cup of currants
a quarter cup of mixed peel and cherries and these candied fruits are
very optional. I'm going to add a half a teaspoon salt
two teaspoon baking powder and a bit of freshly grated nutmeg
also a sprinkle of cinnamon powder. This treat is going to be
extremely flavorful and I'm just going to give this a nice
mix. Now to this I'm going to add a quarter cup of vegetable margarine
and I'm going to distribute this evenly trying to get
a bread crumbs kind of texture and absolutely
no eggs will be needed for this recipe so this would be
great for a vegetarian. Now for more flavor I'm going to add a tablespoon of
vanilla essence and about a quarter cup of coconut milk
and you want to add the milk gradually because you don't want a smooth
runny texture just as its name you want a raw cake rugged texture
and this yields about six beautiful raw cakes
now I'm going to place this on a baking tray lined with greased paper
and to a 350 degree preheated oven I'm going to allow this to bake for
about 25 to 30 minutes. 28 minutes later
these are beautiful and my kitchen smells
amazing but I'm just going to allow this to cool down just a little bit
then I'm going to show you how amazing these are
and there you have it the simplest most delicious
recipe of raw cake or coconut drops just let me know if you know it has any
other name and even though this was rugged on the
outside it was absolutely moist on the inside
you could actually see the coconut flakes this was
simply amazing and this goes great with a cup of milk or a cup of tea
I want to thank you so very much for watching
