Hello, welcome to the Caramel.
Today we're going to prepare a traditional Japanese recipe, which I personally adore.
Los Mochis are basically a sweet made with glutinous rice flour.
In its interior, different fillings are usually placed.
So I invite you to stay and watch the video, which we'll start.
First we'll prepare the crema with which we'll fill our Mochis.
So we'll have a chocolate ganache with 120 grams of cream de lait and 150 grams of chocolate.
Which in this case is semi-bitter.
To do that we heat the cream in the microwave for 1 or 2 minutes.
And then we'll add it to the chocolate.
You can also heat the crema in a pot at low fire but without it boiling.
We'll let it rest for a minute or two.
And then we'll mix until both ingredients are very well integrated.
We put a transparent film in contact with the cream.
And then we'll keep it refrigerated for at least 8 hours or all night.
The cream must be firm when filling the Mochis.
To make the massas de los Mochis we put them in a bowl suitable for microwaves.
The sugar granules, the glutinous rice flour and the cold water.
And here's how to achieve that elastic texture typical of this sweet.
I should use glutinous rice flour.
We remove it very well to undo any clumps that may remain in the mixture.
And also to give it a different color a la masa.
I'll add a little colorant and gel in pink.
Although this step is completely optional.
Then we cover the bowl with transparent film.
And we'll make a few holes with the help of a brooch or a fork.
So that the steam will escape.
We'll take it to the microwave for two minutes.
We move here and we can see how it starts to expand.
We'll give you a second cooking for 2 minutes and 30 seconds more.
Cooking time will depend on how much power your microwave has.
But I recommend that you do not exceed 5 minutes.
Since the dough can overcook and then it will be much harder to stretch.
Now let's mix it up very well.
Until the texture of the dough looks more elastic and sticky.
It's important that you achieve the consistency I'm showing you here.
To prevent the mass from sticking.
We're spreading corn starch both at the base and on the surface of the dough.
We'll stay a little and let it rest until it cools completely before we work it.
Once cold we'll cut into portions depending on the size you want for your mochis.
We cut a piece of dough with the help of a rodillo.
And to give it a round shape you can help yourself to a small container.
So it's easier to fill it up.
We put in the center a little bit of the cream of chocolate.
We close by joining the extremes.
Let's cut the excess of mass.
We'll give it a round shape covering the filling completely.
And then we'll do the same until we're done with all the mass.
I'm telling you that despite being a dessert it's not too sweet and its texture is delicious.
Originally you could find them filled with pasta de porotos rojos.
But they also usually fill them with fruit, ice cream, jam and cream.
And if you haven't tried it yet, I encourage you to prepare this recipe which is very simple and fun to make.
