Come on in everyone. Hello, hello. Hello and welcome. I am Maggie, the substitute teacher.
Just got out of a meeting early so I decided to come on and cook for you guys because I haven't
eaten yet today. So come on in class. Here's where I teach you the substitutions that I've
made to help me lose, so far, 70 pounds with at least 30 more to go. So yeah, let's just get
started. Hey Amethyst. Apologies and a thank you. So apologies. Yesterday I was going to do the
waffles for you guys for dinner but then I saw Lead Attorney was going live and he's made me
a moderator so I canceled my live stream to go on over and support his channel. And then when we got
back from swim, it was just too late to cook. I have a little bit of a confessional. We'll see if
we get to it. And then a huge thank you to everyone for helping me. I have reached my goal of 500
subscribers on YouTube. The reason why I was trying to do that is because I'm eligible for a community
tab. So I've googled and it says it can take about a week for the community tab to pop up. Hey Val.
So I'm looking every day and as soon as I have a community tab, that's when I'll start posting some
of the pictures of the finished product and other stuff that I make for you guys. But I'm going to
do a waffle demonstration or a chaffle demonstration. A chaffle is basically a cheese waffle and I'll
tell you more about that. Anybody who was here for the unboxing yesterday, no for the delivery
yesterday, you see that I ordered this from Target. It's a mini waffle maker so I'm actually
going to open it and we're going to do, we're going to use this for the first time. So let me wash my
hand. So grateful to be able to work from home. So I've got about a half an hour until my next meeting.
So I'm hungry. All right you guys. So I've got a lot going on here but I want to get started.
Let's get started with the batter. So a chaffle, for anyone who doesn't know, is basically a
cheese waffle. There's so many different ways that you can make it. I'm going to go really simple
today just so everybody can see. So for the two ingredients you need eggs, of course, and you need
cheese. You can use the cheese of your choice. You want a like a melting cheese. You guys know that I
love the Leclerc goat's pepper jack. My test results show that I am sensitive to cow dairy so
I've had to substitute goat's milk or almond milk products. So I'm going to do a chaffle
with two eggs. So I'm just going to crack those into my gravy boat. Y'all know that I like,
I'm so glad that you guys are watching. Yeah I know I'm working too. I got a little bit of a
break so look I'll be making this for myself anyway. I'm just bringing y'all into the kitchen
when I'm here. So I love my gravy boat. I think I just got it from Walmart. It's glass so I can see
through it. It stays cool. If you saw the toffee demonstration when you're making like melting
butter or something that can you know be really hot, the handle stays really cool and I like that.
All right so into my gravy boat. All I have are two eggs so far. All right I have some cheese
left over. We'll see if this is enough. You guys may have seen me shred my own cheese. If not I'll
do it again today. I've got a meal prep container left over. Hey Para thank you so much. Thank you,
thank you. So this is another version of the Leclerc pepper jack. So we're not using the
stove today guys. I'm going to be using the dash so I'll do everything here for you. So this comes
in a block and I shred my own cheese. It's optional but I just bought this little $20
shredder off of Amazon. What I found out is that cheese that's already shredded in the store
has extra ingredients to keep it from sticking together and I'm trying to eat really clean for
the month of March. I wanted to lose 10 pounds this month because I have travel plans in April
and so far I'm on track. I'm down about five pounds, a little more than five pounds and we're halfway
through the month. All right so for our chaffle batter, two eggs and I'm just gonna dump all of
this cheese. I think this one was either cheddar or mozzarella. You guys saw me use it yesterday in
the the poblano pepper which was so good. I'm not good with measurements guys. I kind of eyeball and
I look for textures. I spilled some on the counter but I cleaned my counter so I'm putting it all in
there. Y'all know I want all of the cheese. All right so here's what I mean. You know my mom taught
me to use all of my senses when I'm cooking. So I'm going to show you guys what I have and what
I'm looking for. Again I like a chopstick for mixing but literally I just put the cheese on top
of the eggs and I'm going to mix it with the chopstick kind of like you would beat an egg
and I'm looking for a consistency that's thick but still able to pour. So if it's too liquidy
then add some more cheese. If it's too thick and like clumpy then add, well the best thing to do
is add a little bit of a cheese, a little bit of cheese at a time because you can always add more
cheese. I mean I guess you could add more eggs but I'm trying to watch my portion. All right so you
see what I have so far. I do think I want some more cheese. You guys can see it's kind of jiggly.
I want it to be kind of thick and chunky, pourable but I want a solid waffle or chaffle. All right
so you guys have heard me talk about these meal prep containers. I keep these in my pantry. I think
I just got these from Walmart. I use them for obviously for meal prep, for ingredients, for
leftovers and these are really great anytime I host an event, Thanksgiving, Christmas, I always
have these to-go containers on the counter on the table so that people can pack and take with them.
I'll enjoy myself for that meal for that holiday and then I get back on track. All right so I want
some more cheese in my batter. Hello CK. So I'm going to open up, let me just wash my hands because
I had a raw egg. All right so one of the things I love about this little shredder, it's got a
suction cup bottom which keeps it pretty sturdy on the counter. So I'm gonna, when you turn the
suction cup it keeps the shredder from moving when I do the crank. It came with I think three
different, I don't know what these are called, shredders. So this is the one that I use for
cheese. There's a slicer one and there's something else but this is pretty much the one that I use
when I'm done. It all goes in the dishwasher. So literally I just put that together. So I take my
block of cheese. Hey Amethyst. I ordered these online and speaking of online you guys I'm trying
to help you have access to all of the substitution ingredients that I use. So if you go to my YouTube
page, I think it's on my about section, I'm starting to add links that you guys can find.
You know like the goat cheeses and the syrup substitutes and all that stuff. I'm putting it
there so in case you miss it you can find it as well. All right so let me get a knife.
Okay so you can see here this one is my absolute favorite. You can see the pepper jack actually has
like you know some peppers and some spices but it's not spicy. To me this is a really good flavor.
This is my favorite melting cheese. Some people don't like goat's cheese because it is a stronger
taste. It's a little bit of an acquired taste kind of like blue cheese but to me this one is the
closest to like your regular like cow dairy pepper jack. So I love this one. So literally I just cut
the block in half and then I put them side by side like this and then I'm going into my crank shredder
down here. It has a little guard so I put the cheese in where the blade is and then my fingers
are actually here and I'm going to push down and turn and I have one of my meal prep containers
underneath so as I crank I'm just shredding my own cheese. So one of these blocks when I shred it
will last me at least a week. Sorry my suction cup wasn't all the way on. Okay now we're sturdy.
So this is something that kids could do you know with supervision
but I'm literally just turning the crank and it doesn't take long at all to make your own
shredded cheese and I'll show you guys what I have. See Paris says goat's cheese is delicious.
I really like it you guys. My palate has completely changed you know now in my 40s.
You know with the results of my food sensitivity test I had to make a lot of substitutions because
I found out a lot of the stuff I eat all the time my body does not process well. So when I took my
test it was a cheek swab and it was some hair samples and I found out gluten, dairy, in the
beginning coffee, citrus, chicken, a lot of that stuff that I love and I was like what the heck
am I going to eat? That's where the substitutions came in. All right you guys can see I've got this
mountain of shredded cheese. Literally I'm just gonna level it out but I do this probably about
once a week and then I have a meal prep container pressed for time so everything's just going into
this. I don't have to be lazy I can put it in the dishwasher.
All right so I'll show you guys what I have here.
So literally you saw me just shred my own cheese. To me it tastes better because it's you know
more natural it doesn't have any I think they call them anti-caking ingredients and
to me it melts better because again it's just the 100% pure cheese. All right so that's going to
go in the dishwasher. Sorry I'll clean that up later. All right guys so now I'm going to take a
pinch of the cheese I just shredded and add it to my batter because to me it shouldn't jiggle
like this. I want it to be thick kind of like a chunky soup right so I'm taking a nice pinch
and just do it like a pinch at a time. If you had to measure it maybe like a quarter cup of cheese
for every egg and since I'm doing two eggs yeah now I'm getting there. Some people put extra
seasonings in there you could make it sweet you could make it savory but this is our gluten-free
sugar-free calgary-free waffle batter. I think you guys are gonna like this. Yes Para likes uh
I'll let you guys read that so I'll come back to it. So you see what we have here I'm gonna put
just another pinch because you want this to have the texture of a waffle. If it's too much egg it'll
be eggy and kind of limp. The cheese is what crisps it up and gives it that nice structure of
a waffle. So I'm gonna make a four stack and then I'm gonna top it with some fruit. You know my
butter and syrup. I think you guys are gonna like it. I've got so many ideas that I want to do for
you guys. All right I think that's good maybe a little pinch more. Okay yeah okay so let me show
you guys what I have. So this is our batter. If you can see again it's just two whole eggs. You see
how it's thicker? I don't want to tilt it out at you but literally that's our batter. All right
so let me I still got plenty of cheese left. I have a whole shelf in the fridge with you guys
have seen my green onions sometimes mushroom my shredded cheese. So you just grab ingredients
toss them in soups toss them in an omelet everything. All right so Kara likes the goat
cheese too. Okay so now I'm gonna open my waffle maker so let me do a little unboxing.
You can use any waffle maker. I do have a Belgian waffle the big one that you see in the hotels
that turns over. That works fine. I really like the dash. The reason why I bought this is because
you guys have seen me with the mini dash. I have this size which is great to make just one
but when you make one at a time you know sometimes they sit there and they kind of get cold.
So I wanted to try this because I'm going to little recipe card I'm going to be able to
quickly make a four stack with our two eggs and goat cheese. So it's probably like six ounces of
protein. All right let's slide this out. I really like the dash brand for the mini waffle makers.
To me they seem to get nice and hot to cook well. Some of the other ones that I've tried
um they do okay but they're they don't get hot enough. The waffles are still kind of soggy
and I want a good like crunchable waffle if that makes sense. All right
so we got the big mamma jamma.
All the packaging. A recipe book comes inside. You can also find dash recipes online.
All right take it out of the plastic. Pretty color too right? I know so girly. I'm just like yeah
I like that. It's kind of like a what like a Tiffany blue, Tiffany green.
Um all right let's see. So you guys can see one of the things that I like if you're able to see
and I'll have to set it down because it's big. I'll show you on the box. I'll drop my
equipment plus I need it to start heating up. Okay
one of the things when you're making a waffle if you overshoot the batter you know how it
kind of spills out the side. Oh isn't that so annoying? So when I saw this one and I think this
was about $50 but I talked about Shipt the grocery delivery service um they sent me a coupon $25 off
$100 order. So I had like $50 worth of like household stuff and then I put this on to make
the $100 and then got $25 off of that. So if you guys can see right here I thought these were like
little waffle sticks but when I read it it's actually like they call it the overflow channel.
So if you over pour the batter and it kind of comes out to the side it stays right here
on the side instead of spilling over to your counter. So I thought that was nice.
Okay so let's get this plugged in and warming up and I may have time to talk to you guys about
some beverages like I always do. So the dash like any other waffle maker you can see there's a
light here and um it's probably like red when you first plug it up and then when it gets to
temperature it will turn uh yeah parent awesome it'll turn green. So you guys saw what I have
I'm gonna leave it on the counter but I'm gonna tell you what I'm doing. I'm working on getting
some other camera equipment you guys but I've only been Maggie the substitute teacher for
like a month now so I really appreciate you being here. Okay so since this is new I'm just gonna get
a wet paper towel and just kind of wipe it you know with it preheating it'll probably burn off
anything that's on here but just to be you know squeaky clean. All right so I've closed it and
I'm gonna plug it up. I know right isn't that pretty cool? I love sharing all these little
hacks and gadgets with you guys you know yeah the food is a big part of it but also just some of the
ways that you can you know have some shortcuts. All right so I plugged it in and it's red so I'm
waiting when the light turns green I'm going to put my batter in but before I put my batter in
I'm gonna do some goat's butter. So you guys have seen this but if you're new here one of the things
that came up on my sensitivity list is cow dairy and that one was hard for me because I like milk
and yogurt and cheese and all of that but I've had to substitute. I was not aware this was even a
thing but Delamere goat's butter you can get this at Whole Foods you can get it online at Amazon
and then Caputo's is a deli in Salt Lake that will ship for free on ice over about 40 or 50 dollars.
I put all of these links of the stuff that I use over and over on my YouTube page. I think it's in
the about me section so you guys will find it there. All right let's see what else. So we're
waiting for our light to go from red to green. I'm gonna talk to you guys about beverages. I'm
always hungry. All right I'm gonna make some iced tea. I know some of y'all who know my past may get
me about this but hey I'm doing what works. I used to work for a beverage company.
Thank you, thank you Tara. So this brand right here you guys know that I have to avoid sugar.
Sugar causes a lot of inflammation for me and so I still like a sweet flavor. So Lipton actually has
sweet tea that's unsweet. So the sweetener is in the bag so you're gonna brew it just like hot tea
and then pour it over ice. Hey Lisa oh we gotta talk about tonight. All right so this brand
Lipton you can get it at Walmart or whatever and it's called Southern Sweet because here in the
south we like our tea sweet. This is a little pitcher that I bought. I like having little
things like this just for me because it makes me feel like my stuff is special. So this one is the
family size. You can also get the teas in like individual cup size but I'm always drinking. So
what I'm gonna do is I'm gonna put this underneath the Keurig and I'm gonna let it run. So what I'm
doing is I'm just putting the tea bag over the side and then you guys know about my drops. I
always put this in my beverages. You guys know that my test results showed that I was more acidic
and so I needed to drink more alkaline water. You can buy alkaline water or you can make your own.
I need to link this for you guys on my YouTube page. So what I'm doing just a couple drops and
it turns any water into alkaline water right. To me buying the bottles is convenient but it is
expensive. So now I'm going to go run the Keurig with just hot water into the pitcher and all
that's in there is the drops and the tea bag. So it's going to brew hot and then I'll pour it over
ice and it's already sweet without sugar. Okay so our waffle maker is still on red. I'm waiting
for the light to turn green. I had a snack this morning so I'm going to share with you guys what
I had. I can't have grains so the crackers that have been approved for me Crunchmaster, they have
grain-free crackers. Green light. And so I had this chocolate flavor and I spread it with a
goat's cheese kind of like a cream cheese. Excellent. Okay our light is green. So what I'm going to do is I'm
going to take my goat's butter, the whole stick, and I'm going to open the waffle maker and I'm just
going to like a marker rub it over the top and rub it over the bottom all of the four waffle
sections so when it cooks it gives me that nice golden brown. Okay all right so it's open and it's
hot. Here we go. All right so we've got our butter on all four sections and now we've got our chaffle
mix which was just egg and shredded cheese. So I'm pouring with this gravy boat into each section.
I'll have to take a picture of this and when I get my community tab, Google says it can take up
to a week to show up. You guys will be able to see what I'm doing until I get you know a better
setup. So literally I kind of have four clumps. Let me get a spatula. Try to do even sections. Get all
the egg and cheese in here. Try to make them as even as possible. I thought about putting the
blueberries in here. You can do that. You guys know I love a blueberry pancake. You can put them in
after you spread this. I'm usually I'm just using a spatula to like smooth it out. One is a little
bigger than the others. One of these things is not like the other one. Okay sorry I get excited in the
kitchen. I know it's lame but hey whatever. All right let me see if I can move. Just scooping
some of the batter from the big one. So again I'm using a four waffle maker waffle cooker.
Because this batter was thick and not like a liquid, it kind of clumped in the center. So I
just kind of spread it out. Now I'm going to close our waffle maker. So for anybody who's new
this is what I've got going on down here. So I'm making four waffles all at one time
and we're going to top them with fruit and butter and syrup. So let me cut
some butter because you guys know that's the money shot right. All right I'm going to
for my tea. You could make a hot water kettle and just fill it up but the Keurig it only does
like 10 ounces at a time. So I'm just going to run it with more hot water until this is full.
All right so while I'm thinking about it you guys tonight Lisa is coming back and we are going to do
our second cook-along. It's not too late. After this I will post it. I had to change the time
but it's going to be 7 p.m eastern standard time and we're making a squash lasagna. So you can join
us three different ways. Level one you can just sit back relax and enjoy like you're doing now.
We'll do all the cooking. We're going to be side by side on the screen and I'm going to walk you
through the steps. Level two you can get the ingredients because I'm going to post the ingredient
list, the recipe, the shopping list. You can do it off camera and then just send me or post your
finished product. Or level three if you want to join us on camera let me know so I can make sure
we have everything connected. But I love to cook with you guys, cook for you guys. But another
thing and with you if you have the google nest hub you can pull up youtube on that and then you can
pull up any cooking you know instructions including mine and then you can pause it. So I'll tell you
the step you can do it pause and then when you're ready for the next step come back. Okay so you
might see some steam here. Our waffles are still going. We're going to top it with fruit.
All right I'm going to do one more round of tea. Pour hot water into the tea.
Just clean it up.
All right let me wash my hands.
I have a green light. Oh gosh that was faster. That was faster than I thought. I'm going to
take a peek. I'm going to take a picture for you guys. Not bad. I'm going to pull up one so you can
see. Actually I'll just take a picture because I don't want to mess it up. They're nice but I want
a little bit more brown. Let me see if I show you guys what I have. I don't know if you can see that. Okay so not bad
but I want a little bit more brown. So I'm going to let them keep going while I make my fruit.
This is my other special plate that I bought just for me. I have one square plate. Of course I've
got dinner plates for everybody else but when I make my food you know I want to enjoy it as well
so I like to have special stuff just for me. Okay so hopefully you guys can see our tea is brewed.
I did three 10 ounce sections or cycles on the Keurig so it is hot.
So this is the Lipton. I'm just going to let it sit here and brew and then I'll pour it over ice
and again the sweetener is in the bag so I'm able to have the sweet tea experience
without sugar. So this is Lipton iced tea, southern sweet tea, zero calories
and it is sweetened with superlose which is Splenda so if that's okay for you
go for it. All right guys so I have a few blackberries left.
The fruits that I can have are the low sugar fruits, apples, oranges, berries. I'm gonna take
another peek here. Yes Val's never tried goat's butter. I love it. To me it cooks like butter,
it looks like butter, it tastes like butter. I can't tell the difference. Oil is fine but to me
sometimes you want that butter flavor with the brown buttery flavor. It's been a lifesaver for
me. I've got some fresh blueberries here. Hey veggie veggies on too. All right so my portion
is about a cup so I just put the blueberries over the blackberries. I'm just gonna rinse them all
okay they're still going and then I'm going to do I think I can cut these. I have some strawberries
so I'm gonna cut these and we're gonna decorate our plate nicely. Let's see if I can do that in
three minutes. All right just washed our fruit so we'll let that drain a little bit. Chaffles
are looking great. I think I'm gonna unplug it. Let me see if I can cut these strawberries
really quick. Literally I'm just going to cut the top. I know I'm using my butter knife. Cut
the top off and then half and then another half. So half so basically in quarters. All right so I
have two more. I'm gonna do the same. I'm just working on a paper towel here and then I'm going
to plate for you guys and take a taste. You could put cinnamon, you could put sweetener,
you could put whatever. These chaffles that are making again a chaffle is just a cheese waffle,
dairy free, sugar free, gluten free. All right so I just cut up some strawberries.
All right here we go. Let me get a spatula.
A little mini spatula and I'll show you guys what we have here. I think the chaffles look
great or the waffles look great. Hopefully you can see that so they're nice and crispy.
Honestly I probably should have taken them out to let them cool a little bit because they crisp
as they cool. I'll have to do that another time. All right so I'm taking a little pat of butter.
Putting it on while it's still warm and then beverages and condiments. You guys have heard
me say if you're not ready to give up your foods that's fine. You can make a lot of changes in
condiments. So I'm using a sugar-free syrup. So I'm putting that on the first layer.
So this is what we have so far. Olive oil is king. Yeah oil is better when sauteing for sure.
Absolutely. Okay so now I'm getting the second one out of the waffle maker.
So I have my two stack and again the batter. Another little pinch of butter.
That's the goodness right? You want it in every bite. Put it on while it's warm.
More butter and more syrup. I'm gonna be greedy y'all. I'm gonna put the of the not so big one
in the middle. You see how I kind of ran out but you guys can see here how it's nice and crispy.
Not bad. All right butter. Uh yes Jess says I need to take pictures. I am y'all. I'm a one man.
I'm a one one mom van here and I um but yes I will take a picture for you. So third layer
butter and syrup. Okay and then our last layer. You guys can see here not bad and
butter.
Okay and syrup and then you can eat it just like this but you guys know how I feel about
presentation. So I'm taking the fruit that I just cut up and rinsed and I'm literally just
gonna decorate around. Drop the strawberry and put some on the top. All right I'm gonna rinse
this one off. You know what it fell down the disposal so there's a sign. Okay so we've got
some berries on for now. Our color is coming along. Yes um I'm not keto but I do have a lot
of keto recipes because um I don't really count carbs or calories but um basically I eat lean
protein, some vegetables like the non-starchy ones, very little starch and I'm just putting
the berries on you guys. You see what I'm doing? Doesn't it look kind of like all American?
Red white and blue. So I need to get some white so you know what I'm gonna get.
Hopefully it'll work for me. Um so this is my meal and my snack. My snack is fruit
um but yes lean protein, some veggies, little starch, no sugar. That's basically what I eat.
This is what we have so far you guys. Okay and then I'm gonna put a little whipped cream substitute
for you. Again there are options if you can't have dairy you guys have seen me use the coconut milk
uh whipped cream. So ready whip. Looks so good. I'm going in the middle. Can you guys see? Gotta
have the whipped cream. Doesn't that look pretty? All right let me take a quick picture.
Not bad. You guys challenged me and I so appreciate you being here because you're helping to keep me
accountable. I'm gonna get the rest of this weight off and come in live for you when I'm in the
kitchen is my way of saying well I put it out there so we're gonna do it together. So I cannot
thank you guys enough. All right I'm gonna cut into it and show then I'm gonna let you guys go.
I did get some pictures so that's the kind of stuff that I'll put on my community tab.
All right so let me get a nice piece here with butter and with syrup.
Oh my god y'all I just want to put my face in it and die. Okay get it together Maggie.
I'll show you guys the inside. So if you guys can see in here it kind of does have that waffle
like texture and you can see inside. Not bad huh? So I'm gonna try a plain one then I'm gonna try a
bite with fruit. Y'all okay this time with the fruit then I really have to go.
All right so I got some waffle, getting some cream, some strawberry, blackberry, and a blueberry.
I think I got everything in butter and syrup. So good. The berries they're sweet and kind of tart.
You have a little bit of eggy. It's not a waffle it's a chaffle but it gives me the waffle
experience you guys. I absolutely love it. I know my happy dances right? So this is what I'm eating.
This will be my first meal. I only eat two meals a day. So I'm gonna hop and because I got work to
do. But 7 p.m tonight we're having our cook-along. Look for the post. We're making a squash lasagna.
Yeah you guys the kitchen makes me happy. So this is what I wanted to make for you guys. I hope you
like it and I'll see you guys on the next one. Thank you. I gotta run. I got work to do. Bye
Instagram. Bye Facebook and YouTube.
