Hi everyone, it's Raquel of Raquel's Caribbean Cuisine. I know you may be familiar with a banana
muffin, even a plantain muffin. But have you ever tried a banana plantain muffin? This was quick,
easy and absolutely delicious. So here I have two well overripe plantains and three bananas
and I refuse to throw them out. And I remember someone in the comment section asking,
Well, these are black but the insides are still looking good. So as long as they are not rotten,
they are perfect for this recipe. So I pounced upon these while cleaning my refrigerator
and there and then a recipe was created. So I'm going to add these to my bowl along with
overripe bananas and the riper these are, the sweeter and the more delicious these muffins
will be. Now I'm going to crush these until they are nice and mushy. No mixer whatsoever
is going to be needed. I'm just going to whip this up quick and fast. So now that these are
nice and crushed, I'm going to add one cup of sugar to this. And this is just like making a
banana bread. Same procedure, same ingredients. Now I'm going to mix this nicely. I'm going to
add two beaten eggs to this, which really makes this nice and fluffy. But if you don't eat eggs,
one cup of applesauce is a great substitute. Also I'm going to add a few quarter cup of melted
butter and I'm going to whisk this until it's nicely combined. Now I'm going to add a quarter
cup of milk, any milk of your choice, along with some vanilla essence for that great flavor. I'm
going to give this a nice whisk and now that this is done, I'm going to put it aside. Now it's time
for the dry ingredients. Now to another bowl, I'm going to add one and a half cups of flour,
half a teaspoon salt, two to three teaspoon baking powder, half a teaspoon baking soda,
one teaspoon cinnamon powder, and some freshly grated nutmeg. And all of these simple ingredients
gives amazing flavor. Now I'm going to give this a nice mix. Now I'm going to sift this into the
banana mixture. Now I'm going to mix this until the flour is nicely mixed in, which doesn't really
take long. And if I was making a banana or planting bread, I would pour this into my
greased baking bowl, but because I'm making muffins, I'm going to pour it into some cups
along with some muffin liners. And when you're done, you could sprinkle this with whatever you
like, or you could leave it as is, but I'm going to sprinkle this with a bit of oats and nuts and
to a 350 degree preheated oven. I'm going to allow this to bake for about 20 minutes or until they
are perfectly done. 20 minutes later and my kitchen smells so good. A toothpick came out
clean. These were perfectly done and you want to sit and allow this to cool down just a little bit.
These banana planting muffins was nothing short of perfection. The flavor, its moisture,
oh my goodness. I would give this a 10 out of 10. I really did not expect them to be this good.
Absolutely delicious. A full written recipe will be listed down below
in the description box and I want to thank you so very much for watching.
