In the far north of Thailand is the city of Chiang Rai.
There are many huge tribes living in the surrounding mountains of this beautiful region.
The Akha people have the most delicious and tasty food, not at all like the Thai food you know.
It's here at Akha Mino coffee shop where you can try real Akha food.
Oh, by the way, please like and subscribe to this channel. We would love to have you with us
on our magical journey of food, culture and love. I am being shown around the place by Chef Kla
and he is very proud to show me the coffee plantations and vegetable gardens which are
all of course organically grown. I am Apinya and I will be your guide today.
The coffee beans from this region of Thailand are the arabica type and the flavor is smooth and deep.
Don't forget to say hello to Thuy when you visit
but today it's all about the food grown and served here.
First, we collect lemongrass from the field along with a few fresh eggs.
Eggplants are so abundant and an important part of Akha diet. We harvest mustard leaf,
a root vegetable called shoe. Only the roots are eaten for this dish and crispy fresh
carrots. There is something so earthy and simple harvesting your own vegetable and creating
wonderful healthy food. After a thorough wash, it's time to start preparing some of the many
steps involved in creating this masterpiece. Welcome to Chef Kla's Akha kitchen. Meat and fish
are hung over the fire and are smoked to perfection during the cooking of other foods.
This is a winter melon, an important part of the Akha diet.
Chef Kla peels the outer layer and cuts into small pieces.
Next is fresh farm breast chicken. It too is chopped into small pieces. How the color of the
meat. Ginger and lemongrass chopped. Add some softened rice to the pok pok which is like a mortar
and pestle and pound until like fine breast crumbs.
Time to stoke the fire to ideal cooking temperature.
The chicken is placed into hot oil and allowed to brown.
In goes the ginger and lemongrass along with the melon. Add water to cover and allow to cook for
around 15 minutes. Season with salt. Wow, the smell in this kitchen are just wonderful. The next dish
is using the root vegetable shu. We picked earlier. By the way,
this herb has many health benefits and has an anti-inflammatory effect.
Add the mustard leaf.
Pour a little water into wok and add lemongrass along with ginger and vegetables.
Spice up a little with fresh chili. Don't stir too much.
Time for a little taste.
Into the pok pok goes young garlic and lots of chili.
Yep, this is a spicy one for sure. Give them a good pound.
Into a hot wok add a little oil then add some sliced pork
along with the ground garlic and chili.
In goes the shu.
Add a splash of water.
Pinch of salt.
Some sawtooth coriander.
Let cook a few minutes. Another taste, taste and season as required.
Very delicious.
Next up is the potato dish. Clean and peel the potatoes and chop into small pieces.
Boil until tender. While waiting to cook, we move into the next dish.
Thread some cherry tomatoes along with chilies and garlic onto squeevers
and then place on the hot coals. Blacken the skins just slightly to bring out the rawest
flavor. Garlic and chili go into pok pok and broken apart. Add spring onion and coriander.
Peel the tomatoes and add to the pok pok. Grind to a smooth paste and add ground pumpkin seed.
You have the most incredible flavored dip. When the potatoes are done, drain and mash
into a smooth consistency. Add chili and garlic to oil and then the mashed potatoes.
In goes a handful of coriander and warm gently.
Now for the blanching of mustard leaf.
The produce is so fresh and colorful. Into cold water to stop the cooking process.
Then it's split at the stem to easy eating.
Chop some ginger and grind. Then add to the mustard leaf.
Add some coriander,
salt and ground pumpkin seed and mix well.
Now for the omelette. Add five eggs, some oyster sauce. Make sure to mix well.
Into some hot oil, stir until egg is cooked.
Now for the smoked meat, which is pork.
Heat oil and cook the smoked pork for a few minutes. Some carrot and other vegetables are
branded. Eggplants, bamboo shoots, cucumber. Fresh steamed rice and we're ready to go.
Wow, this is the finished platter. Everything is natural and unprocessed.
Even the bowls and serving utensils are made from bamboo. I would love to thank Chef Ka for
allowing us to see how this delicious food is created. Hopefully you get to try soon.
Look forward to see you on the next video.
