Thank you for watching my channel. My name is Asana Mori. I am fish dealer and run sushi restaurants (SHIMONOISHIKI) in Japan. I would like to introduce Japanese Japanese fish cutting skill and fish food. I'll also be sharing with you the many home cooked recipes that I've loved cooking and eating myself at home with my family.
Good morning, this is MORI! Well, what day is it today?
Today I am in Tottori prefecture! And now I'm at the Sakaiminato market. Speaking of this hat,
I would like to visit the market. Yesterday, I gave a lecture at the Yonago Chamber of Commerce and Industry, so I stopped by!
There are major fishing ports in Japan, and they are designated by the Fisheries Agency
as those with a particularly high volume of catches
, and Sakaiminato in particular
has been ranked number one in terms of volume of catches for five years in a row. It's a fishing port with a lot of fish.
It is a vibrant fishing port. I saw a lot of Sakaiminato fish at the Nagoya market, so
I thought I'd like to check it out, so I decided to come.
Unlike Toyosu Market, this is a local production market, so
we usually go to the consumer market where
we buy fish from various prefectures, but here we sell the fish we caught
to the consumer market outside the prefecture. It's a local market where it's shipped to, so it's completely different.
So I think there are aspects of the market that can
only be seen here . I'm looking forward to it because it's a big scale!
The scale is really big. I heard that the auction for Red Snowflakes is about to begin.I
watched the auctions, and I thought there were a lot of young people, but even
so, there are still not many young people, and the lack of successors is becoming a big issue. It's sad that even though it's such a core industry,
there are no people to carry it into the future.
He says he is thinking about how to get people interested in fisheries.
Wow, amazing, amazing red
snow crab is red even if you don't boil it. It is called red snow because it is red.
It's really big. Red snowflakes don't taste bad
, but they tend to lose their freshness, so they're cheaper. The taste is sweeter and more delicious than that snow crab
. What do you recommend to eat? The best way to eat it is in a hot pot.
Grilled crab is also popular because it comes with soup stock
. This one is sold for processing because of its small size.
These are all crabs... Sakaiminato is home to about 60% of all red snow crabs in Japan.
That's amazing. We're looking at No. 1 in Japan today.
I think the image of Matsuba crab coming from Tottori prefecture is that
Matsuba crab can only be caught in November. Fishing for red snow crab is prohibited only from July to August.
Tottori Prefecture has a particularly long fishing season, which has led to an increase in the amount of fish caught, making it number one in the nation.
In order to conserve resources, efforts are being made to protect the females, such as not taking the females
, and these efforts have kept them number one in Japan.
The auction begins!
Do you sort by size?
Check the size and whether the legs are broken.
Is it done by hand? I'll do it by hand.Yes
, it's difficult. How many people will be on board the ship? There are 9 people.
Crab fishing usually takes about a week. Isn't it a day trip?
It takes more than a day just to travel.
It's more difficult than I thought. Bidding for red snow crab is only available at Sakaiminato.
The auction has begun!
Write the price on a piece of paper, hand it over, and the person who wrote the highest price can buy it.
Apparently the bidding has now ended and the person who bought it is taking it home.
It seems that each basket contains about 30 kg.
It's a huge amount. It took 9 people to pick it up and
sort it out, which was a lot of work! I really hope it sells well. How can I judge crabs?
Look at the colors and joints. The joints of the ones that contain the flesh are extremely swollen.
The purse seine
fishing boat has returned. It is said that the ship will unload about 250 tons of fish. But when 1,000 tons of fish are landed, a big catch flag will be raised at Sakaiminato City Hall!
Mackerel, sardines, and horse mackerel are often caught.
Is it over yet?
This ship is finished.
This is the fish that was landed earlier.
What is that conveyor belt doing?
As the fish flow, those to be frozen automatically flow to another lane.
Fresh fish to be shipped goes to the factory in the back.
looks delicious!
Relatively small sizes are sorted for freezing.
There's also a large size in there.Hmm, that means it's automatically
sorted by size.This is frozen sardine-flavored mackerel.It's amazing.There
's a measuring machine that looks like a labyrinth with fish moving all over the place,
and here it's 15. Divided by kilo. When it reaches 15 kg, it flows into the box.
The sardines are frozen!
This is used as feed for tuna farming. It's luxurious!
A storage freezer. It's so cold that my eyelashes freeze. Wow, the smell of fish!
Wow, it’s beautiful! I wonder how many fish are here? amazing.
I would be happy if I saw tuna, and I would be happy if I saw so many sardines. The scale is huge!
good morning.
The fish we sorted earlier are flowing over here!
They are sorted into exactly the same size. amazing. Can you really tell this apart visually?
I agree. Measure with a weighing machine and separate by hand. Smaller mackerel will be sold to sushi restaurants.
This is the important point after all.
How do you separate fish species? Fish species are sorted by the width of the roller.
Smaller fish species will be dropped, and larger fish will continue to flow away.
I see, that's accurate
. It's a red sea bream. It's a good size.
After sorting and packing like this, it's time to start shipping.
It looks like it will take until the evening today.
I ended up buying a little too much. It was a huge amount.
Today alone, we will ship 2,000 cases to Tokyo.
amazing. .
I hope you come to the Nagoya market too! I'm looking forward to tomorrow! I'll look for it!
