Welcome back to The Busy Baker.
Today on the channel we're making this one pan turkey dinner.
An easy solution for a holiday dinner if you're feeding only a small crowd, about two to four
people.
First, we're going to start by roasting the potatoes.
Now because we want to end up with mashed potatoes, because what holiday dinner is complete
without mashed potatoes, we're going to peel six potatoes and chop them into small pieces,
seasoning them with about one teaspoon of salt, and you can add about a tablespoon of
butter in here if you'd like, and we're going to secure them inside a parchment paper pouch.
This is going to actually steam the potatoes as they roast, so they end up nice and moist.
Next we're going to take a two to two and a half pound turkey breast, seasoning it with
salt and pepper, and a teaspoon of garlic powder, and then we like to mix some unsalted
butter, about a third of a cup, with some fresh herbs.
Here we have thyme and parsley and sage and rosemary, but you can feel free to use whatever
you'd like, whatever you have on hand, and feel free to use dry if you don't have any
fresh herbs on hand.
Spread that herb butter all over the top of the turkey breast.
This will keep it nice and moist as it roasts.
Place this in the oven at 400 degrees for about 20 minutes, and then you can start prepping
your vegetables.
We like using Brussels sprouts and carrots, but you can feel free to use whatever vegetables
you'd like.
Simply season the vegetables with a little bit of olive oil and some garlic powder, salt
and pepper, and then toss them until they're coated.
This recipe is extremely versatile, you can use whatever vegetables you like, and in the
description box below you'll find a link to our website where you can find the list of
all the vegetables that you can use in this recipe, and how long each of them require
to be cooked.
After 20 minutes have passed, pull your turkey breast and potatoes out of the oven, and place
the vegetables on the tray alongside the turkey and potatoes, and roast again for another
20 minutes.
This will give you a roast time of approximately 40 minutes, but be sure to test the doneness
of the turkey using an instant read thermometer, and be sure that the turkey reaches 165 degrees
Fahrenheit so that it's completely cooked through.
Rest the turkey and the vegetables while you remove the potatoes from the little parchment
paper pouch, and mash or rice the potatoes as you wish in a bowl.
If you want to skip this step entirely and make roasted potatoes instead of mashed potatoes,
you can feel free to skip the parchment paper pouch and simply roast the potatoes as they
are on the sheet pan, along with the turkey and the vegetables.
For ultra creamy mashed potatoes, be sure to add a quarter cup of unsalted butter, three
quarters of a cup of warm milk, and we also like to add some sour cream to our mashed
potatoes to make them even creamier, about half a cup, and you can add some black pepper
and even garlic powder if you wish.
If your holiday dinner isn't complete without roasted sweet potatoes, stuffing, or green
beans, not to worry, we have instructions for all of those ingredients too, feel free
to head to our website via the link in the description and we'll give you all the details.
And since no turkey dinner is complete without gravy, we like to add the pan drippings to
a little pot, along with half a cup of white wine, and then we make a slurry out of some
flour, about two tablespoons or so, and a quarter cup of water, and add that to the
gravy as well, along with about one cup of chicken stock to thin it out.
And there you have it, the perfect turkey dinner for Thanksgiving or Christmas, made
in one pan, in less than one hour.
So if you're intimidated by the idea of making a holiday dinner for your family and friends,
do not be afraid, this recipe is so easy, and we have got you covered with our complete
guide to a one pan turkey dinner.
