Who doesn't love delicious French toast?
It is so easy to make,
and most often you already have the ingredients
in your cupboards.
This recipe is amazing, you will love it.
If you've ever made French toast before,
you know that it moves quick.
You make your batter, you dip your bread,
you cook it, boom, boom, boom, keep repeating.
I'm gonna start off with a little bit of prep.
Sound good?
Let's cook.
So we're gonna make an awesome topping for our French toast
and it begins in a stand mixer with the whisk attachment,
or you can absolutely use a hand mixer.
Add in some heavy whipped cream
and then some mascarpone cheese.
This is a little trick I learned from my good friend
over at Passion for Baking.
Now sprinkle in a bit of sugar.
We're next going to hit it
with a little bit of vanilla extract.
You could use fresh vanilla bean seeds if you'd like.
And then we're gonna crank the speed onto high.
What we are looking to create here
are medium to stiff peaks.
We want it to be nice and soft,
but we don't want it to be stiff like a meringue.
Medium to stiff peaks here is exactly where it's at.
Once it is to this consistency,
be sure to take it off the stand mixer
and we're going in the fridge to keep it cool
until it's time to serve up.
I know you're thinking,
what on earth does that delicious looking whipped cream
have to do with French toast?
For me, it is all about toppings with French toast.
I want fruit and berries and whipped cream
and syrup and powdered sugar.
I want all of those things.
So that's why I made it.
It is optional, but I promise once you taste it,
oh my goodness, you will be in love.
Now let's get to the bread.
So I've got a loaf of brioche bread
and I've got an awesome recipe that I just made.
So this extra loaf is coming in handy
and is perfect to make this French toast with.
So I'm gonna slice this pretty dang thick
because to me it needs to be thick
to take on all that batter.
And let me stop and say,
you do not have to use brioche bread.
I just think it's so buttery and so amazing.
It makes the most delicious French toast.
But you can use challah bread.
You can use Texas toast.
Heck, you could even use slices of Wonder Bread.
Use what you have.
But of course, if you wanna take it to the next level,
this brioche is where it's at.
Now for the batter.
In a medium sized bowl,
I'm going to be adding in four large eggs.
Next, I'm gonna hit it with some half and half.
Yes, you could use whole milk, even cream 2% if you want.
Half and half is a great combo of fat in the milk.
So next, add in some cinnamon.
You can also hit it with a bit of nutmeg if you'd like.
Now add in some vanilla.
You could use vanilla bean seeds here as well.
I'm also gonna hit it
with a little bit of granulated sugar
and you could stuff this out for brown sugar
if you'd like as well.
Use what you have.
Now using a whisk, take the time to mix this together.
It's hard because the cinnamon will want to clump up.
So it may take two to three minutes to whisk this
till everything's nice and smooth.
What I like to do now is pour it over into a pie dish,
something with a little bit more diameter and circumference
so I can easily dip the bread in on both sides.
We're almost ready to go.
Everything is prepped.
And again, I can't say it enough.
This is gonna move super, super fast.
So pay close attention.
Take everything and head right over to your cooktop.
And you know me, I've got a griddle flat top
built into my cooktop.
So it's on 350 degrees or medium to high heat.
I'm gonna add on some unsalted butter
and wait until it's melted.
By the way, yes, you could absolutely use
a regular saute pan or cast iron skillet.
Now grab one slice of that thick brioche bread.
And what we want to do is dip it on both sides
right into that batter.
Make sure you get a good amount of cinnamon on there.
This looks perfect.
We're going right to that hot griddle
where the butter has melted.
And it's gonna take maybe two
to two and a half minutes per side.
Maybe even one minute, depending on how hot your pan is.
The goal here is to form a nice crust
on the side that you're cooking.
Get it nice and browned up.
You can see the cinnamon is cooked in.
This looks perfect.
At this point, what you want to do
is simply remove everything from your pan or your griddle
and cook this off in batches.
Almost time to serve this up.
And I say it all the time, comies,
it is all about understanding
these classic fundamental techniques
and putting them into practice.
How to make a proper French toast batter.
What kind of bread to use, how to cook it
so it's perfectly browned.
And of course, to load it up with toppings.
You start using all these things,
putting them in your everyday cooking,
they will always taste way better.
Better than the restaurants, better than the grocery stores.
Heck, I may never go to brunch again after making this.
It's so amazing.
Now let's plate everything up in slow-mo.
You know I said I'm all about the toppings, my friends.
And this whipped cream with mascarpone cheese
is absolutely amazing.
It's hard not to eat by itself.
So give yourself a good dollop
and then I'm gonna hit it with some powdered sugar.
This is gonna add some nice sweetness
and obviously gonna make it look really pretty as well.
Last but not least, more sugar, my friends.
I'm gonna drizzle on some maple syrup.
You could sub this out with honey if you'd like,
but I think syrup just is a perfect combination
to go with French toast.
And usually what I like to do at the end
is I love to finish it off with fresh berries.
You could also use jam here just as an FYI.
But the fresh berries are a nice touch
and man, oh man, check out this beauty.
Quick enough to make in the middle of the week,
but it's definitely one of those
brunchy weekend-type breakfasts.
It is so good, you guys, I can't say it enough.
