Today, we're making Malaysian style wonton noodles with char siu.
This video is all about making the sauce for the noodles.
You can go to our other videos to see how we made char siu and wonton.
First, if you like spicy food, add one teaspoon of chili paste.
Then, add one teaspoon of light soy sauce, half a teaspoon of sesame seed oil,
two teaspoons of kecap manis, which is an Indonesian sweet soy sauce,
half a teaspoon of sugar, followed by three teaspoons of dark soy sauce.
If you like your noodles to be darker, you can add one more teaspoon in it.
Also, add one teaspoon of oyster sauce.
To add more fragrance to the noodles, we're adding half a teaspoon of pork lard oil,
as well as a few dashes of pepper to taste.
We have also added three teaspoons of wonton soup, which we didn't show here,
but you can get the recipe from the wonton video.
The purpose is to melt the sugar slightly.
Then, mix well, set aside and let's prepare the noodles now.
Prepare a pot of boiling water and add thin egg noodles and cook for 30 seconds.
We suggest cooking one portion at a time for easier handling and more even cooking outcome.
We bought these noodles from the refrigerated produce section from our local supermarket,
so you can try and see whether you can find one from yours.
Notice we have a bowl of cold water by the side,
so that we can cool the noodles after 30 seconds of cooking in the boiling water
to prevent the noodles from overcooking. This way, the noodles will be al dente.
After cooling the noodles, we're just going to plunge the
noodles for one last time in the boiling water and then serve.
Add the noodles to the sauce that we have prepared earlier and mix well.
Then, garnish the noodles with some vegetables of your choice,
like gai lan or choy sum, followed by some char siew and wonton to complete the dish.
So here's our yummy wonton noodles.
