Hi there! I'm so happy to meet you. 🥰 I've been craving chicken thigh since yesterday! So today I'm going to the kitchen and making the supreme teriyaki chicken! 😋 First the chicken thigh ~ 400g boneless chicken thigh. You can use skinless chicken thigh but I highly recommend using skin-on
Spread it to the cutting board, and cut off the remaining cartilage. Then remove excess skin, fat, and bloodline if you see it. Look, I remove a lot
Look at this, chicken's thickness is not even so I have to make it evenly. First I butterfly the chicken thigh to create a uniform thickness
Then I use the side of the knife to pat it. The reason for this is to make the heat go through even. And it'll become so soft teriyaki chicken.
Poke holes in the skin. It keeps the skin from shrinking too much as it cooks and further permeates the flavors of seasonings.
Look at the chicken thigh, It's so flat! Sprinkle a pinch of salt and black pepper - I use the powder. If you don't have it, you can use a coarse type.
Rub it evenly. Please don't sprinkle too much salt. Using salt here helps brown the chicken beautifully as the cooks
Seasoning on both sides
Let's make teriyaki sauce. I use 1.5Tbsp Soy sauce + 2Tbsp Mirin
2Tbsp Sake + 2Tsp Sugar
A little bit of grated garlic
A little bit of grated ginger. I want to add extra flavors so I like ginger and garlic. You can omit it if don't like it. But remember to grate them and don't exceed so much because teriyaki sauce gets easily overpowered by those.
Mix them well until the sugar gets dissolved and set this aside. Teriyaki sauce is ready. It's easy. Now let's come back to chicken again.
Next is an important point, I coat chicken thighs with a slight layer of cornstarch. I use 3 Tsp cornstarch for both sides
Scoop about 2/3 teaspoon to each side then spread it evenly like this. Cornstarch helps the chicken's moisture not drain out so your chicken will stay moist after cooking and thicken the teriyaki sauce
But don't sprinkle too much cornstarch because too much starch will make teriyaki sauce too thick too quickly. Can instead of cornstarch by potato starch
Add a little cooking oil into a frying pan - I use 1/2 Tablespoon. The chicken's fatty oil will come out easily so pour only a little.
Place the chicken in the pan. Please place all the chicken skin side down in the frying pan
Then turn on the heat to medium-low. By heating the frying pan very slowly you can keep the skin from shrinking rapidly
About one minute later when you hear the cooking sound, press the chicken against the frying pan with a spatula. By doing this you can keep the meat from curling and help brown the skin evenly and beautifully
Make it like this for the first few minutes
Look, the chicken's fat come out, and let's wipe off excess oil
After about five minutes I'll rotate the chicken so that it cooks more evenly
When the skin has been browned nicely, turn over. I cook the chicken skin side down for 8 minutes. You can check how much the skins cooked has been brown before flipping
Cook the chicken meat side for 2-3 minutes. Look at this guys, it's grilled very well.
Wipe off excess oil one last time
Add the teriyaki sauce
Simmer the sauce for 1 minute
After one minute of simmering your teriyaki sauce will start getting thickened. So flip the chicken over and over and glaze it with teriyaki sauce
Keeping simmer until the sauce thickens more
And the chicken will get a beautiful glaze like this. And we want the sauce on the skin side too so, pour it on the top.
When the sauce is reduced to this much this is ready to turn off the heat. After taking the chicken out, this is the amount of the sauce left in the pan. I add a little black pepper to the sauce (Optional)
We done! Look at this beautiful shine!
There's a lot of way to make teriyaki chicken but my way is the best! So definitely try it 😘
Pour the remaining teriyaki sauce over the chicken.
It looks good! The sauce is good too! You can also serve it with rice, steamed vegetables, and green salad... I love serving it with hot rice with the sauce drizzled on top. Yummy
