Hi everyone! In today's video I'll show you how to make zucchini fritters.
The first thing you will need to do is grate the zucchini on the large holes of a box grater.
Then you have two options. You can either leave the zucchini as is, or you can sprinkle the
zucchini with salt, allow it to sit until the zucchini releases its juices for about 15 minutes,
and then squeeze the zucchini. When you do that, the zucchini fritters will be crispier,
but they won't be as moist. In this video I'm leaving the juices in, but it's up to you.
Next, add salt, green onions, or any herbs you like. I really like chives or even dill in this
recipe, and finally chickpea flour. Mix until well combined.
The final step is to pan fry the zucchini fritters.
Heat a little bit of olive oil in a cast iron skillet over medium-high heat.
Scoop a portion of the batter, about quarter of a cup, onto the skillet,
and use a spoon to flatten it into a fritter shape. Cook on one side until golden, for 2-3 minutes.
Flip, and cook until golden on the other side and cooked through, for another 2-3 minutes.
And that's it! Light and tender, vegan zucchini fritters.
These zucchini fritters are not only quick and easy to make, but they're also really convenient
because they're portable, and they're delicious. So, how do you like them?
I like the way they smell. Really, like, I don't know, I like this home-cooking, like,
delicious smell to them. Maybe, like, maybe just because of the way they appear. It's like,
it doesn't smell like eggs, but they are very, not very, they're chewy on the outside,
soft on the inside. Very little chickpea flavor, surprisingly, but it's binding everything
together really well. Really light and refreshing. They look like they'd be heavy and dense,
just because they kind of look like a pancake or, like, hash brown breakfast food,
so they look like they'd be heavy, but they're very light and refreshing.
They're very tasty, so I'm really impressed.
All right, so I hope you enjoyed this video. If you did, please give me a thumbs up,
