Wanko soba, jajamen, and morioka ramen.
These are just some of the amazing noodle dishes found in Morioka.
With roots on the Korean peninsula, Morioka ramen features uniquely chewy noodles in a chilled soup.
At this workshop, you can learn to make ramen noodles for yourself.
They're made by kneading together wheat flour and potato starch with boiling water.
The dough is then immediately pressed into thin noodles.
Because they're extruded, not cut, the noodles have a smoother texture
with no irregularities on the surface.
Rinsed in cold water, they become semi-translucent, a quality unique to Morioka ramen.
Looks good!
The course is popular with visitors of all ages from Japan and overseas.
So why not try it yourself?
