Hello everyone.
Today on the agenda, Loca Piña Colada.
This is a drink that we all love.
Unfortunately, the classic version is normally loaded with sugar.
So making a sugar-free version is not that bad, yeah?
For those who don't know, there's so many claims to the origin of this drink.
Some say Piña Colada originated in Puerto Rico.
There's so many bars that claim to have made the original recipe.
I like to believe it originated in Puerto Rico and thank you for that, Puerto Rico.
We're going to be using canned coconut milk.
When I'm getting my coconut milk from the can, I like to shake it so the lighter milk
blends with the cream.
So I would get something really rich.
We are also going to be using some white rum.
I would say do not use the darker version.
Use white rum.
And it is definitely low-carb and keto.
And then we're also going to use some pineapple, diced pineapple.
That's half a cup.
So I know most of you are going, no, no, no, no, fruits, keto.
Don't worry.
This is only half a cup for the whole recipe.
And I find using the original fruit really works to bring the flavor as close as possible
to the classic version.
We are also going to be using some pineapple extract.
And I am using for this recipe powdered wrong fruit sweetener.
You can also use other low-carb sweeteners.
Just make sure to have it powdered or to buy powdered sweeteners.
So you don't end up having a grainy pina colada.
Some ice cubes.
This is totally optional.
And I have some toasted coconut.
This is also optional.
You can also add a slice of pineapple to decorate.
Whatever makes you fancy.
Making the low-carb and keto pina colada is basically easy.
All we need to do is mix all the ingredients in a blender and process until smooth.
And creamy.
And voila!
