I've been vegan now for over 10 years.
I'm staying at my parents at the moment.
I'm watching my doggies.
Say hi. This is Bodhi.
Today's video, I'm going to show you guys
some realistic meals I eat as a vegan of over 10 years, okay?
And kind of give you some tips on how to eat a vegan diet,
how to make it easy, accessible, realistic.
Hopefully this is helpful for you.
Hi, you want to say hi?
Say hi to everybody.
Hi, I know.
Oh, you guys are going to get jealous if I do this.
And then Bodhi's right here.
These girls are going to get jealous.
You can't get jealous.
Don't get jealous.
Aren't they the cutest?
Aren't they so cute?
Oh, I know.
The other day, I tried a recipe
where I made bagels out of tofu and flour.
If you haven't seen that video, I'll link it below.
But honestly, they did not turn out very good at all.
They were way too dense and heavy,
but I still had to eat them.
So I took a half of a bagel,
and then I sliced that in half,
and I put that in the toaster.
In the meantime, I'm going to pan fry some smoked tofu.
One of my staples is hummus.
So of course, I am going to spread some hummus
onto my bagel slices.
You can also make your own hummus.
I do that sometimes if I can be bothered.
I'll leave a link to a hummus recipe below.
It's a lot cheaper to make your own, but I get it.
Life is hard, and we are lazy.
So don't feel bad if you have to buy certain things
like hummus, sauces, and whatnot.
Whenever I'm making a meal,
I try to make it as balanced as possible.
And how I do this is by basically making sure
I have some sort of a carb source.
So in this case, it would be the bagel,
some healthy fats such as avocado,
plant-based protein like this smoked tofu,
and of course, some sort of fruit and vegetables.
So we have some tomato here, apple slices, and blueberries.
And of course, here are my dogs begging for food as usual.
I'm not the biggest fan of bananas,
but I did have a banana as a snack.
And even though nuts are high in calories and high in fat,
I've been trying to snack on them a little bit more
because they have so many health benefits.
I wanna talk about something that is very, very important,
which is supplementation.
One of the things that I do recommend,
especially if you're like newly going into a plant-based diet
is to get some kind of blood work done in the first,
like, I don't know, maybe year or so.
I mean, it's obviously good practice
to get it done like regularly,
but especially in the beginning
when you kind of don't know what you're doing
or you're kind of figuring things out,
just to make sure that you're kind of like
on the right track.
Because there are certain things
that might be difficult to get from a plant-based diet alone.
So for example, things like vitamin B12,
you definitely want to be supplementing B12,
even though there are some foods that you could get
like nutritional yeast or maybe soy milk,
other products that have B12 fortified in it.
I just feel like, you know,
you might as well have an insurance,
just take that vitamin B12 pill.
It's really not that difficult, okay?
So that brings us to Complement Essential.
So thank you so much to Complement

and the things that might be difficult to get
on a plant-based diet.
And it really focuses on those key nutrients
and nothing extra that you might not need.
These are high quality supplements.
And what I like about it
is that I don't have to think about it.
I don't have to sit there and figure out what I need to take,
figure out the different types of pills I need to take.
It's all in one multivitamin.
So it makes it super easy and simple.
And they also have other awesome plant-based products
such as plant-based protein powders.
They also have a daily greens powder.
If you are having a hard time getting in those greens.

For lunch, I decided to have one of my go-to meals
which is a soba noodle bowl.
I love these bowls because they are so customizable
depending on what you have on hand.
So I love to just kind of add in
whatever fresh veggies I have.
So in this case, I had some cucumber, lettuce,
and some green onion.
And I also had some broccoli.
So I decided to actually cook that separately
because I do prefer cooked broccoli.
Here are the soba noodles, aka buckwheat noodles.
I get these at the Korean or Asian supermarket
and they come in these really handy dandy bundles.
And it only takes about five minutes to cook.
And I think that's why I love them so much.
Plus they're super chewy and tasty.
And I heard that they are healthier
than just regular wheat noodles.
I could be wrong, but either way, they are awesome.
Another one of my staples is edamame beans.
I just keep a big bag in the freezer
and I just heat it up to melt it before eating it.
I throw it into everything.
It's high in protein, so delicious, and just so convenient.
So I always suggest keeping a bag of edamame in the freezer.
It'll make your life so much easier.
And once the soba noodles are done cooking,
all you have to do is just drain and rinse in cold water
just until the noodles are cold.
And simply just add those noodles into your lovely bowl
full of veggies, full of protein,
and then just add the sauce of your choice.
Now I have this Korean spicy tangy sauce that my mom made.
This is kind of similar to chogochujang.
I think I have a recipe for this somewhere,
so I'll link it below.
It's super easy and delicious
and I'm just gonna mix it really well.
And at the end, I like to top this
with some toasted sesame seeds.
And that's basically my lunch.
And as you can see here, once again,
super balanced and delicious.
There's the carbs from the soba noodles,
the protein from the edamame.
We've got tons of veggies.
It's lacking a little bit of fat,
but honestly, there's probably enough
that I ate throughout the day, so it's okay.
And then we've got the side of the broccoli
that I cooked up.
I'm also gonna eat this with some radish kimchi
that my mom made.
This is so good, you guys, oh my God.
One of my favorite types of meals.
One of my tips when it comes to switching
to a plant-based diet is to make sure
that you're not just taking things away
from your existing diet and not properly substituting it
with some sort of plant-based alternative.
For example, a lot of people make the mistake
of just taking out their animal-based protein
out of their meals and then just not replacing it
with a proper plant-based protein.
And this is a huge mistake,
not only because you're taking away a lot of calories,
meaning that you're gonna be starving,
but also protein is the macronutrient
that's gonna help you feel fuller and more satisfied.
So whilst there is protein in vegetables,
you're simply probably not eating enough
to cover the protein that you're taking away from your diet.
So I suggest always making sure that you're adding
some sort of a high plant-based protein
into your meals, such as beans, lentils, tofu,
tempeh, seitan, and even plant-based meats.
And speaking of plant-based proteins, here is some tofu.
We have two different kinds.
We have some extra firm tofu,
which I'm cutting into thin slices.
And we also have some leftover smoked tofu,
which I'm gonna use as well.
And there are so many different ways of preparing tofu,
but honestly, one of my laziest and easiest ways
is to simply pan fry with a little bit of oil.
So I just pan fry the tofu on each side
until it's nice and golden.
And if you want it more crispy and golden,
just add some more oil.
And I usually like to add some salt on the tofu as well.
So for dinner, I decided I wanna eat a lot of veggies.
And if you don't know,
my favorite way of eating a ton of veggies
is making Korean lettuce wraps.
I recently did a Korean barbecue mukbang
where I basically show you how to do
a vegan Korean barbecue
and also how to enjoy Korean lettuce wraps.
And since then, I have really been enjoying
the Korean lettuce wraps.
So let's do it again.
Okay, so I just cut up some mini cucumbers
into thin, long pieces.
And I'm also going to wash up some lettuce.
Now, whenever I do this, I wash up so much lettuce
because I can literally go through
an entire head of lettuce eating this in one meal.
So prepare lots of lettuce, people.
I've got some rice left over from the other day.
So I'm just going to heat that up.
Here's another lazy hack for you.
Just make a big bulk of rice in advance
and keep it in the fridge, keep it in the freezer,
and just heat it up whenever you're ready to eat it.
Okay? Okay.
So once again, that tofu is going to act
as our protein source.
And if you haven't guessed yet,
tofu is my favorite plant-based protein.
It is just so versatile, so easy, so handy, and delicious.
And I'm a firm believer that if you don't like tofu,
then you probably just don't know how to cook it
and don't know how to enjoy it
because tofu is the greatest thing ever.
And in order to enjoy lettuce wraps,
you need ssamjang, which is Korean seasoned paste.
This is great for veggies, like a veggie dip,
but also for the Korean lettuce wraps.
And then into a little dish,
I'm just mixing in some salt and toasted sesame oil,
which I'm going to use as a dip.
And we've got some radish kimchi.
We also have some burdock root that my mom made,
which is a lovely Korean side dish.
And let me just show you how I make
these delicious lettuce wraps.
So first you take a large leaf of lettuce.
If it's too big, you can just rip it in half or so.
Place a little bit of rice in there.
And then I'm going to take my pan-fried tofu,
and I'm actually going to dip it in that salt
and sesame oil concoction.
And that is, oh, so good.
You're going to put that in the lettuce wrap
along with the ssamjang, which is the seasoned paste.
And then you are going to wrap it up and open wide.
So yes, this is definitely my favorite way
of eating a ton of veggies.
So I highly recommend trying this out.
It's so much better than eating a salad.
Let me just tell you, okay?
And with the cucumber, I also like to dip that in ssamjang.
And this is my favorite way of eating cucumbers,
let me tell you, because when I was growing up,
I actually did not like cucumbers
unless they were dipped in ssamjang.
So that's the only way I enjoyed cucumbers.
Otherwise, I did not like them.
So I highly recommend trying that out.
And as you can see here,
this meal is something that I actually grew up eating,
except for I veganized it.
So instead of using meat, I'm using tofu,
and I'm still getting that protein.
And it's so delicious,
and it's so much healthier like this as well.
So these are simple ways
of making your vegan journey more enjoyable
if you are someone that's new
and you want to incorporate more plant-based meals,
think about how to take your existing favorite meals
and how to veganize them.
So many of my favorite meals that I grew up eating,
I've learned to veganize with just a few little tweaks.
It's actually quite simple for most meals.
Let me know in the comments
if there are certain meals that you used to eat growing up
and you veganized it,
and let me know how you veganized it,
because I need to know.
