Now I'll show you how I prepare my Chinese BBQ powder or Shao Kao Fen.
I have with me over here 10 grams of chili powder.
If you do not want it to be so spicy, you can reduce it or if you want it spicier, just
add a little bit more, no problem at all.
Add in 10 grams of cumin powder, put everything in, 3 grams of Sichuan pepper powder.
On the packaging, it actually reads Prickly Ash Powder, okay, it's the same.
So just pour everything in, this is for the numbing effect.
Add in also 3 grams of Shisan Xiang or Thirteen Fragrance, I'll show you the packaging in
a while.
Put everything in.
This is how the Shisan Xiang packaging looks like.
You can get this from any Chinese major superstore.
I think it's available in NTUC and Foodstorage also.
Of course if you cannot find this, you can just replace this with five spice powder.
Not as fragrant but still good.
Next we'll add in 8 grams of salt.
Now for the saltiness, you can actually judge by yourself how you want it to be.
But this is how I like it to be, a little bit spicy, a little bit savory, a little bit
herbal taste as well, very good.
So now all we have to do is just mix this up.
If you cannot finish this, you can always keep it for your next barbecue and you want
to use this for, no problem at all.
Now of course if you do not want to make your own barbecue powder, you can always get off
the shelf.
But this is how I like my barbecue powder taste to be, so I prefer to make it on my
own.
Okay, so after this is done, we just set this aside and sprinkle this over the chicken when
they are done.
I'll catch you back in a while.
