On today's menu, a delicious recipe that's sweet, spicy, and a little nutty.
Green papaya salad.
Lei Hou Ma. That's how it's going in Cantonese. I'm Will Young from youngmancooking.com. Welcome
to the channel where you can cook with confidence. This salad is one of my
favorites because it is so delicious and incredibly addictive. Let's begin.
This here is a green papaya. Now it's actually the same thing as the regular papaya that we're
more used to seeing at the big box supermarkets, but this is kind of like the unripe version of
that. And you'll be able to find these at your Asian grocery store. Peel down one medium green
papaya. On a side note, when I used to run that nut milk or coconut milk business, I was cracking
coconuts almost every single day. And there were times where I actually accidentally sliced my hand
pretty bad a few times, and it's definitely not something to take lightly. So sometimes I will
actually use this non-cut glove, which is made with this thick material that will help just kind
of protect your hand a little bit more. So definitely better safe than sorry. Carefully
and continuously chop the papaya, making lots of incisions. Carefully slice down the papaya,
making rustic looking shreds. If it makes sense, I would recommend doing more of a slicing motion
rather than just a straight up chopping one. Carefully roll around the papaya, chopping
continuously. You'll know when to stop when the seeds start to peek through the center of the
thinly sliced into matchsticks. Thinly slice one apple into thin matchsticks.
Two cups of cherry tomatoes, thinly sliced. Two pieces of garlic, finely chopped.
Place the garlic into a bowl. Two green chilies and one red chili. Of course you can remove the
seeds to make it less spicy, but I'm going to make this salad a little bit on the spicier side.
Finely chop the chili peppers. Juice of one lime. A third cup rice vinegar.
Two tablespoons maple syrup. Two and a half tablespoons soy sauce.
Mix to combine. Pour the dressing onto the salad. Mix.
Plate generously. The hardest part of this recipe really is not eating it right away because there's
one last step. Frying pan. Medium heat. One cup peanuts. Toast the peanuts for four to five minutes.
Roughly crush the peanuts in a pestle and mortar.
Sprinkle the toasted peanuts onto the salad. This salad is definitely not for the faint of heart.
You can now enjoy this crunchy and delicious salad with absolute confidence.
Man, does this salad look incredible or what?
This is definitely one of those recipes where it's a party I definitely want to attend.
Right from the first bite you are welcomed with that really refreshing and satisfying
crunchiness of the green papaya, but it's flavored with this incredibly delicious dressing
that has that salty umami, the tanginess from the lime juice, the acidity from the rice vinegar,
and the sweetness from the maple syrup that really balances out the spiciness coming from those chili
peppers. And then you get that punch of flavor from the delicious finely chopped garlic in that
dressing. Such a simple dressing but it gives that incredibly delicious flavor of that salty, sweet,
spicy, tangy. And then you get this abundant amount of delicious, fresh, crunchy textures
from the green papaya, from the sweet crisp apple, as well as those crushed toasted peanuts.
That just adds this extra layer of kind of smoky flavor. The tomatoes adds a little bit of that
acidity and that really nice juiciness. Those herbs really lift up this dish and adds that
kind of aromatic experience and brings this entire salad together. The thing is, the longer this
salad sits with that dressing, the better and the tastier it actually will become. If you do make it
and leave it overnight for the next day, just remember to leave the peanuts set aside. Definitely
an easy dish to make, super addictive, and super delicious. This recipe definitely makes enough,
I would say, for about four to six portions, but I can definitely sit down with that big bowl and
enjoy it all by myself. Now if you love easy and delicious recipes like me, then definitely check
