Tomato and Peach Salad Recipe

Hey, I am making a salad that contains two of my favorite things about summer.
Peaches, perfectly ripe peaches, yum. And tomatoes, the best summer tomatoes.
You might not normally think to put these two together, but I promise you,
you will thank me when you make this salad and you have those two together.
So I'm just taking about a pint of cherry tomatoes and putting them in a bowl.
I quartered them because they were pretty big, but you can just have them if they're small.
And then this is a gorgeous white peach, but any kind of peach will work.
And I love it when the pit just pops out like that, then you know it's really perfectly ripe
for sure. And I'm just going to cut the peach into, oh, about one inch chunks,
about the same size as the tomato. One of the things that's surprising,
I think, about summer produce is that it's actually very hydrating. So we typically get
about 20 percent of our fluids from the foods we eat. And in the summer, that becomes more
important than ever. And so this salad is super hydrating and the flavors of it complement
pretty much anything, any protein that is slathered with barbecue sauce,
because barbecue sauce has that tomato, savory, fruity,
that balance of savory and sweet. That's the same in this salad. So the salad really echoes
anything you might be barbecuing. And I love that about it. So if you're invited to like a potluck
and you're asked to bring something, I promise you this will be a super win.
I put some blueberries in, too, because, well, that's another one of my favorite things about
summer. And the color is amazing and the flavor works. And so then we have all this kind of sweet
ish stuff. We're going to go in a savory direction, just like barbecue sauce does, right,
with some onions. So about two tablespoons of chopped red onion. And then bringing up again,
a more sweet, savory, a tablespoon of olive oil. So this is a dressing, a tablespoon of good
quality olive oil and a tablespoon of white balsamic vinegar. Now, what I love about balsamic
vinegar, white balsamic, is that it's naturally sweet, right? But if you don't have white balsamic,
you can also use one tablespoon of regular white wine vinegar and one teaspoon of honey to bring
up that sweetness. Then I'm going to do a little bit of salt, a quarter teaspoon of salt
and some pepper. And that is all there is to it. I have to tell you this with burgers, with chicken,
barbecue chicken, with ribs, with anything. But also it's lovely with fresh mozzarella cheese.
And then you have a vegetarian option, too. And then I'm just going to do some basil.
And that is it. It is beautiful, isn't it? Look at that. Wow. Peach and tomato salad.
Who'd have thunk it? Let's give it a taste. We have sweet, we have savory, we have juiciness.
Oh, my goodness. I could probably eat this entire bowl by myself.
Cheers. I hope you try it. Enjoy. You're going to love it.
