Sweetened Condensed Milk
——Ingredients——
1 cup fresh whole milk
1/4 cup sugar
1 tbsp. unsalted butter
Hey everyone, Elaine here.
Today I'm sharing deep fried mantou with that golden crisp texture
paired with sweetened condensed milk that goes amazingly well together.
First, how to make homemade sweetened condensed milk?
Pour in 1 cup of fresh whole milk and then add the sugar.
Start with slow fire and stir for a while until you can't feel any sugar at the bottom.
Now turn up the heat slightly to a medium fire and add the butter.
Continue simmering for around 15 to 20 minutes.
In this stage, don't stir it while simmering.
You can see that lots of floats will attach to the edge of the pan and also the milk skin.
Please don't mix them with our sweetened condensed milk.
One of the most critical steps is to decide when to stop heating.
I love the shape holding technique when you use a scraper to separate a gap on the surface of the pan.
It will hold for a while.
The last step is to strain, ensure that there is no grainy texture.
Sometimes it may contain broken milk skin or floaters.
At this time, you may find that the sweetened condensed milk is still too runny compared to the store-bought version.
However, it will become firmer once it has cooled.
That's our perfectly made sweetened condensed milk.
Now prepare your coffee, ice cream, pie, iced tea or bubble tea and enjoy a milky sweetness with this sweetener.
This time, I will use this batch as a sweet flavor dip for deep fried mantou.
Choose small mantou buns and divide them into two groups.
Steam one group until hot.
In a pot, heat enough oil for around 7 minutes over medium heat.
Test the oil temperature with chopsticks.
When bubbles sizzle along the chopstick, it means the oil is hot enough.
Add the buns into the fryer until golden brown.
During the process, the buns will keep floating on the surface.
Press them down to soak them in the oil for evenly deep frying.
Transfer out and filter the extra oil.
Lay the steamed buns and fried buns one by one and place the dipping bowl in the center of your serving plate.
This is the Chinese dish, golden silver mantou crispy outside, fluffy inside, bursting with creamy sweetness in every bite.
We look forward to your feedback.
See you next time, bye!
