Hey guys, today I'm going to show you how to make a quick and easy Pollo a la Diabla.
So if you want to learn how to make it, just stay tuned and I'll show you how.
Alright guys, so let's get started with our ingredients.
For this recipe we're going to need 2 pounds and a half of chicken, 4 Roma tomatoes, 2
to 4 chile chipotles in adobo sauce, 4 guajillo chile pods, 4 chile de arbol, 2 garlic cloves,
1 small onion, 1 cup of baby carrots cut in half, 2 medium diced potatoes, chicken bouillon,
salt, and black pepper.
So these are our ingredients.
Now let's get started.
Alright guys, so we're going to begin by seasoning our chicken.
Here I already have my chicken breast cut into small pieces.
I'm going to be using a little bit of garlic salt, a little regular salt, and black pepper.
Just going to make sure that everything is nice and seasoned.
Okay, so once we have that we're just going to set it to the side so we can get ready
to take it to the stove.
To a small saucepan, add the Roma tomatoes, chile guajillo, and chile de arbol.
Cover it with water, set it on high heat, and bring it to a boil.
And once it comes to a boil, transfer it to the blender cup.
And once we have that we can get ready to make our sauce.
To the blender cup we're also going to add the chile chipotles in adobo sauce, a piece
of onion, 2 garlic cloves, chicken bouillon, and this is optional but I also like to add
a little bit of tomato sauce.
And just blend with half a cup of water.
Now blend until smooth.
Okay, and just like that we have our Diabla sauce.
So now we're going to set it to the side so we can take it back to the stove.
In a pan over medium-high heat, I'm going to add a little bit of oil.
And once it's nice and hot, we're going to begin to add our chicken.
Make sure to layer it in a single layer.
So do this step in batches if you need to.
And we're just going to give our chicken about a minute or two and then we can flip it over.
After the minute, flip the chicken over to the other side.
And just allow that side to cook for another 1 or 2 minutes.
After another minute, we can remove the chicken from the pan.
And the chicken is still raw, okay?
It's going to finish cooking once we throw it back with the rest of the ingredients.
Just remove it from the pan and repeat the process with the rest of the chicken.
Okay, so once we have seared all of our chicken, we're going to add a little bit more oil to our pan.
Along with about 1 or 2 tablespoons of butter.
Okay, and to that we're going to add our potatoes.
Along with our carrots.
Season them a little bit. Season them with a little bit of garlic salt.
You're mixing and allow it to cook for 3 minutes.
After 3 minutes, add the onion.
Mix it in and allow it to cook for another 2 minutes.
After 2 minutes, add the salt.
And you can strain if you need to.
I'm going to also be adding a little bit more water to my blender cup.
Just mix it and begin to scrape the bottom of your pan.
And here we're just going to bring it to a simmer.
And as soon as your sauce comes to a simmer, taste it for salt and see if you need to adjust it.
And now we're just going to return our chicken.
Mix it in.
Okay, so here we're going to cover it. Reduce the heat to medium.
And allow it to cook for 10 to 15 minutes or until our potatoes and carrots are nice and soft.
And our chicken is fully cooked.
Alright guys, so after 10 minutes we're going to check our potatoes and chicken.
Let me tell you this, it smells delicious.
Right here, I'm just going to poke a potato.
Make sure that it is fully cooked.
And as well for the chicken.
Done.
And just like that, our delicious Pollo a la Diabla is done.
So now we can get ready to serve.
Alright guys, and now for the fun part, serving.
Now I like to serve my Pollo a la Diabla with a side of white rice with vegetables.
So I'm just going to grab it.
And just like that.
