We visited Moriya, a long-established Japanese confectionery shop founded in 1625, with its main store in Kanazawa, Ishikawa Prefecture, and filmed the traditional and beautiful process of making Japanese sweets.

In this video, we take a close look at the production process of the popular summer-limited product “Galaxy Journey” and the delicate process of making nerikiri sweets.

“Galaxy Journey” is a refreshing confectionery that evokes the clear summer night sky, with its blueberry hues and transparent agar layers beautifully depicting the twinkling stars and Milky Way. The taste is also a perfect harmony of the tartness of the fruit and the gentle sweetness of the white bean paste. It is an artistic masterpiece that can be enjoyed both visually and gustatorily, as if a small universe were unfolding within a single bite.

Additionally, the handcrafted nerikiri, inspired by flowers and natural landscapes, evokes the changing seasons as a form of Japanese art. The sensitivity and technique embedded in each piece have been cultivated over a long history and continue to be passed down to this day.

Morihachi is a renowned shop that seamlessly connects the traditional Japanese confectionery culture nurtured alongside Kanazawa's tea ceremony culture to the present day. Its confections embody the beauty and spirituality of Japanese culture.
