Hi and welcome to Spice and Pans. Today we'll be cooking quick braised chicken with potatoes.
So let's start cooking. We're going to pan fry the chicken first. Heat up a pan, add in a little
bit of oil. Swirl the oil around. We are going to pan fry the chicken using medium heat. I have
with me over here 800 grams of chicken. Cut into small pieces like this. Just pour them in. Just
brown them a little so that it will be more flavourful. Make sure that every single piece
is in contact with the pan or wok. Just leave it to pan fry for one minute or so and then we will
flip it to the other side. Now we're adding 10 grams of sliced ginger, sliced thinly like this.
Just spread them out on the chicken. I did not marinate the chicken so you do not have to
marinate the chicken as well. I'll now flip the chicken to the other side. This is what we want
to achieve. Basically frying the chicken first is also to extract the oil out of the chicken
so that this dish will be more flavourful. It's already smelling very very nice. We'll pan fry
the other side for about one minute too. Now we'll add in our garlic. Five cloves of garlic, also
sliced very thinly. Just spread them up. Once they're pan fried the other side for one minute,
we'll add in five grams of rock sugar. I'm also adding in 300 grams of potatoes. Cut into cubes
like this. Your kids will love this and it goes very very well with steamed rice. Now we'll just
give this a mix. We'll just mix them up well and just pan fry them for another minute. Get all the
flavour really into the potatoes. We'll now add in our seasoning. One tablespoon of soya bean paste.
I'll show you how it looks like in a while. This is actually how it looks like in a bottle form.
Add in also one tablespoon of oyster sauce, one tablespoon of light soy sauce,
as well as one tablespoon of dark soy sauce. Mix them up. Smelling so so nice. We'll add in one
whole leek, cut into sizes like this. Of course if you do not have leek you can use scallion or even
capsicum, whatever vegetables that you like. No problem at all. Mix up well. We'll now add in
one whole onion, cut like this. Just spread them in. Same thing, mix it up well. Now we'll add some
water, 500 milliliters of water. Just spread it out a little bit. Put the lid on. At medium heat,
we'll braise this for 15 minutes. I'll see you back in a while. We have been cooking the chicken
for approximately 15 minutes. Let's just have a look. Wow smells really good. Let's just give
this a taste. Extremely flavorful. Love it. Stir it up a little bit. Wow they just thickened this
up a little bit. Just a little bit of cornstarch solution. Mix up well and to top it off, we'll add
in two tablespoons of Huatiaojiu or Chinese cooking wine. Now if you do not take alcohol, you can
actually omit this. No problem at all. Just mix this up well. All right, time to have our lunch.
And now the dish is done. Let's have a taste. I'll try the potato first.
It absorbs the taste really, really, really well. The chicken. Oh my, this is really good.
A little bit of the sauce with rice. Excellent combination. The sweetness of the chicken,
the potatoes absorbing all the sauces. This is really good. So ladies and gentlemen, I hope you
