Welcome back to Meanie's Organic Eats.
Today we're making homemade Twix bars with only seven organic ingredients.
Skip the store-bought versions this Halloween and make these instead.
Let me show you how to make them.
So first we're going to preheat the oven to 350 degrees.
Then we're going to add in 113 grams of softened butter.
Next we're going to add in 71 grams of sifted powdered sugar
and then one teaspoon of vanilla extract.
Now we're going to mix this on low until combined and you don't see any bits of powdered sugar.
Next we're going to add in 127 grams of all-purpose flour.
Now we're just going to mix on low until combined into a smooth cookie dough.
Next I'm going to line an 8 by 8 inch baking pan with parchment paper.
Now I recommend using an 8 inch baking pan and not a 9 inch baking pan
because this cookie layer is going to be pretty thin as it is.
So trying to spread it out an extra inch may be kind of difficult.
And now the cookie dough should be really smooth.
It should feel like Play-Doh in your hands.
And we're just going to take this and press it evenly into the baking pan.
Once we have the cookie dough pressed into the pan and it's as even as possible,
we're going to bake this at 350 degrees.
So while the cookie layer of our Twix bars are cooling,
we're going to make the chewy caramel candy layer.
And now this is my true caramel recipe that I use and it only has three ingredients.
So we're going to start off with some organic cane sugar
and we're going to need butter and heavy whipping cream.
And you guys want to make sure that you're weighing your ingredients for the caramel.
It's super important because the ratios of sugar,
butter, and cream is what's going to give us a chewy caramel candy
as opposed to a caramel sauce or a hard caramel candy.
So I have 170 grams of cane sugar in a small pot.
We're going to put this over medium heat.
So if you guys have a very powerful range like I do,
like if you have a gas range, I recommend cooking more towards low.
But if you have electric range, you're going to be perfect on medium.
So now we're just going to dry burn the sugar until it begins to crystallize
and then it's going to melt.
Continue stirring until it's completely melted into a liquid.
And you guys want to make sure you're using a high heat spatula for this.
This is super important because you can burn your spatula,
you can warp it, and you can even melt off a piece of your spatula into your caramel.
Trust me, I've done it before.
So you just want to continue to lightly stir
and make sure that all the sugar is melting completely.
As soon as the sugar is completely melted and there's no chunks,
we're going to add in 57 grams of salted butter.
And now be careful because steam will rise up.
So you want to make sure you're stirring the entire time
to incorporate the butter completely.
This is going to prevent any clumps from forming.
Once the butter is completely combined,
then we're going to add in a quarter cup of heavy whipping cream.
Same thing here, just be sure to stir the entire time.
Steam may rise up.
As soon as the cream is completely combined,
then we're going to remove it from the heat.
Now we're going to take the hot caramel and pour it over the baked cookie layer.
Then we're just going to spread it out evenly.
So now we want to let the chewy caramel set.
You can leave this out at room temperature
or you can speed up this process by putting it in the fridge or in the freezer.
I always like to put this in the freezer
because that will ensure that I get nice clean cuts
when we cut these into the iconic Quix bars.
Once the bars are chilled,
now it's time to cut these into 16 Quix bars.
I like to cut these in half and then cut each side into eight bars.
Next, we're melting 12 ounces of milk chocolate in a heat proof bowl.
You can do this by doing 30 second intervals in the microwave
or using a double boiler, either works.
Make sure the chocolate is in small pieces like this so it melts easily.
If you're using a chocolate bar, be sure to chop it up.
Next, dip the Quix bars into the milk chocolate and coat them completely.
I like to use a fork like a spoon so excess chocolate will drip back into the bowl.
Place the coated Quix bars back on the baking sheet.
Then place the baking sheet in the freezer to quickly set the chocolate
and then you can drizzle the excess chocolate on top for a pretty finish.
And now we have homemade Quix bars with just seven organic ingredients.
