Hi friends, my name is Precious and you're welcome to my kitchen.
Today I am making coconut ice cream. If you are a coconut lover like me,
you're going to love this coconut ice cream. It has amazing coconut flavor. It is so creamy
and it is so easy to make. You don't need an ice cream machine for this recipe.
Okay, let's get into it. Start by pouring 2 cups of heavy whipping cream into a large
mixing bowl that has been sitting in the freezer for about 30 minutes.
Beat the cream using an electric beater until stiff peaks form.
You can find heavy whipping cream in supermarkets. If you're not in a country where heavy whipping
cream is readily available, just check your local supermarkets and ask for heavy whipping cream.
To the heavy whipping cream, add a 13 to 14 ounce can of unsweetened coconut cream,
a 14 ounce can of sweetened condensed milk. By the way, the measurements in grams, in ml,
they are going to be in my recipe notes. So you want to check out the recipe on my blog
preciouscore.com. Also add a teaspoon and a half of coconut extract. This is really going to
enhance that coconutty flavor and drive home the fact that this is coconut ice cream. Then add 1
eighth of a teaspoon of salt to balance the sweetness. Beat everything until smooth. Pour
the glorious ice cream mixture into a loaf pan. Then cover with a plastic wrap ensuring that the
plastic wrap touches the ice cream mixture so that it stays put while it freezes. And then when it's
done freezing, you can just peel off that plastic wrap. You could also freeze your ice cream in any
bowl you have on hand. As long as the bowl is freezer safe, you're good to go. I love using a
loaf pan just because it gives me a lush surface for scooping the ice cream. Let the ice cream
freeze for eight hours or overnight and you have amazing coconut ice cream. That bright white color
just has my heart. This ice cream guys is so creamy. It's perfectly coconutty. If your ice
cream is too hard once you take it out, be sure to leave it sit on the counter top for about 30
minutes. Then you scoop and you serve OMG. Creamy, coconutty, sweet but not insanely sweet. Insanely
delicious. I love keeping coconut shells. I feel like when you put coconut ice cream in coconut
shells, it looks so good. It tastes different. Okay friends, that's how you make amazing coconut
ice cream. Thank you so much for spending time with me. For the full recipe, don't forget to go
