Hi, welcome to another episode of Mix In With Robin. Today we are making German chocolate
icing. I don't know how many of you have ever made this but I'm usually eating it out of the pan
before I get it to the cake. So in one of our other episodes, hopefully you'll watch it,
we made a crazy cake. It's a chocolate cake and every year my mom would make one of those for
my brother. That was his request. I on the other hand needed to have a store-bought cake with
cream cheese, you know frosting, but my brother wanted a crazy cake with German chocolate icing.
So in honor of my brother who has passed away, I am making German chocolate icing today and this
can go on just about anything you want to put it on because it's just that good. So in the pot I
have put a stick of butter and we're going to melt this down. So now we are adding in our sugar
which is one cup of sugar. Okay it's going to look like this. So you're just going to keep mixing
until all that white disappears to this mixture. Your butter's in here, your stick of butter,
your cup of sugar. Now we are going to add in a little bit at a time our evaporated milk.
So just kind of stir it as you get it in there and it starts to blend in. Add a little bit more.
Let me show you what that looks like before I keep adding. So you're adding that evaporated
milk in there and this is going to cook. What it's going to turn into is almost like a caramel
goodness. It will look a little caramelly and it will thicken and the one thing we need are three
eggs and we are only going to use the egg yolk. Just use your cups that you had your milk and your
sugar in is fine but take that egg and just get rid of that egg white okay
and just keep the egg yolk. Dump that into your other thing your other mixing measuring cup and
do the same thing with the next egg until you have all three eggs in and you've gotten rid of all the
egg white. Okay you can save these egg whites don't throw them away they're great you can freeze them
put them in a container and mark the date that you put them in the freezer so you're not trying
to remember how long they've been in there. So just set those egg whites aside you can even mix
with your spoon but take those egg yolks just kind of mix them up you want to mix really good
get them all stirred up. Okay now you've got a warm mixture going on here okay
so you're going to add just a little bit of this wooden spoon's not quite given me enough
so add a little bit at a time because that way you don't get scrambled eggs okay so
once you get this done okay when you get that part you dump those eggs in you get this to a
thickening point and at that point you're going to add a cup and a half of shredded sweetened
coconut and to that you're going to add a cup of chopped pecans okay so I'm going to let this
continue to cook and thicken and when it's all done we're going to come back and I'm going to
show you what it looks like. Okay we are back we finished our icing I want you to look at what this
looks like so people call this German well it is called German chocolate icing and I had a friend
asked me well you didn't put cocoa in it and make it chocolate and I said no it's not chocolate
but you would think that because it's called German chocolate icing is because typically
this icing gets put on a chocolate cake we made this cake earlier and now we're going to ice it
with this icing so it is an amazing amazing icing and it just kind of it's just like a lot of coconut
and pecan and kind of a caramelly goodness look at that just it's good it's just yummy and then
this cake is yummy it's very moist it's a super moist cake with again no dairy no eggs but you do
have eggs in the German chocolate icing but when I'm done here I'm going to come back and show you
how else you can decorate this cake and when I say decorate Easter's coming up so I want to
show you a few little tricks that you can do with the other half of this cake
