Today we are going to be making a traditional radish cake at home. It is soft, savoury and
perfectly crispy on the outside and incredibly flavourful. If you love tofu, you would love
this radish cake. Take four fresh radishes and peel off the outer layer. Shred them using a
food processor. This gives you fine consistent strands that cook them beautifully. Transfer
the shredded radish into a large pot, pour in one cup of water and let it boil for about 15 minutes.
While the radish cooks, take a blender and add one and a half cups of pre-soaked rice.
To pre-soak a rice, just take rice and add water and set it aside. Add two cups of water and then
blend it into a smooth milky texture. Pour the mixture into a bowl and whisk in five tablespoons
of cornflour. If you don't want any lumps, first mix the cornflour into a small bowl with some of
the mixture. Then pour that back into the large bowl. Once the radish is fully softened, pour the
rice-cornflour mixture directly into the pot and mix thoroughly. Make sure the flame is turned off
because we are not going to be cooking it here. What we are going to do is that we are going to
transfer the mixture into our steaming setup. Line your steaming pot with a large cloth to
prevent sticking. Pour the radish mixture on top and use the back of a spoon to level the surface
evenly. Close the lid and steam the mixture for one full hour. After steaming, the radish cake
will be firm and fully set. Carefully flip it onto a board and let it cool for another hour.
This will help it hold its shape. Once cooled, slice the radish cakes into large cubes. Avoid
cutting them too small because smaller pieces tend to soak up extra oil during frying.
Heat a pan with a bit of oil and shallow fry the cubes until the outside turns golden and crispy
while the inside stays soft and tender. For the dipping sauce, mix 9 tablespoons of vinegar with
9 tablespoons of soy sauce in a bowl. Slice 6 cloves of garlic and fry them until golden
in a small amount of oil. Pour the garlic along with the hot oil directly into the sauce mixture
to create a rich aromatic dim sum style dipping sauce. And there you have it, the perfect homemade
radish cake. It is soft, it is savoury, it is crispy and it is paired with the most flavourful
garlic soy sauce dipping. If you enjoyed this easy radish cake recipe, don't forget to like
