Alright, holiday hero mode, let's roast a Christmas turkey that actually tastes like
something.
For a medium family, I'm rocking a 12 to 14 pound turkey.
Frozen?
Cool!
Let it thaw in the fridge, about 3 days for 14 pounds.
Step 1 is the secret.
Dry brine.
Pat the bird dry.
Mix 1.5 tablespoons kosher salt per 5 pounds of turkey, black pepper, pinch of sugar.
Sprinkle it all over, under the skin on the breast if you can, inside the cavity.
Pop it on a rack, uncovered, in the fridge for 24 to 48 hours.
This is flavor and juiciness insurance, day of roast.
Bring the turkey out 45 minutes early to take the chill off.
Smash together a compound butter, 1 stick softened butter, zest of a lemon or orange,
4 minced garlic cloves, chopped thyme, rosemary and sage, plus a splash of olive oil and black
pepper.
Gently loosen the breast skin with your fingers and slide some butter underneath.
Rub the rest all over the outside.
Stuff the cavity with halved onion, a smashed head of garlic, a halved orange, and herb
stems.
No heavy stuffing inside, that's how you dry out meat.
Bake your stuffing separately.
Tie the legs loosely.
Tuck the wingtips under.
Set the turkey on a rack over a roasting pan.
Underneath, scatter chopped carrot, onion and celery with a cup of water or low-sodium
stock to catch drips and build gravy flavor.
OVEN STRATEGY
Start hot, finish steady.
Preheat to 450° to 130°.
Roast the turkey, breast side up, for 30 minutes to get that skin started.
Drop the oven to 325° to 165° and keep going until the thickest part of the breast hits
Time-wise, plan roughly 13 to 15 minutes per pound at 325° after that initial blast, so
a 12-pounder is about 2.5 to 3 hours total, but don't cook by clock, cook by thermometer.
If the skin's getting too dark before you're done, tent loosely with foil.
Basting, optional.
That skin is already doing the most.
If you baste, do it quickly every 45 minutes to avoid dropping the oven temp.
When it hits temp, transfer the turkey to a board and rest 30 to 45 minutes.
Non-negotiable.
Resting equals juicy.
While it chills out, make gravy.
Skim excess fat from the pan, place pan over medium heat, whisk in a couple tablespoons
of flour, cook 2 minutes, then whisk in 2 to 3 cups stock until silky.
Season to taste.
Carving.
Remove the leg's separate thighs and drumsticks, pop off the wings, then slice the breasts
off the bone and cut across the grain into thick slices.
Plate it up with your gravy, maybe a sprinkle of flaky salt and some fresh herbs.
That's a Christmas turkey.
Crispy skin, juicy meat, no stress.
You did that.
Happy holidays.
