Chicken Pot Pie Soup

Today on The Stay At Home Chef I'm showing you how to make chicken pot pie soup.
It's got all of the flavors from chicken pot pie in soup form and it is so good.
In my version I actually use gnocchi for the pastry element which just makes this
over the top delicious.
Dice one white onion.
Then we'll peel and slice four carrots and slice four ribs of celery.
You'll also need to season one and a half pounds of boneless skinless chicken breast
with one teaspoon of salt and half a teaspoon of black pepper.
And be sure to get both sides.
Once you've got everything prepped it's time to grab a six quart pot and head on over to
the stove.
We're going to heat one tablespoon of olive oil over medium high heat.
We're going to sear the chicken for three to five minutes per side just so that they're
but not all the way cooked through.
Once seared go ahead and remove them and set them aside on a plate or cutting board.
Then melt four tablespoons of the butter in that pot with all of that brown goodness.
Then we can add in all of those vegetables that you chopped up.
We're going to let these cook for about five to seven minutes until the onions start to
soften.
The carrots and celery will continue to soften as the soup simmers.
You're just getting things started and building flavor.
Sprinkle in half a cup of all-purpose flour and add two tablespoons of minced garlic.
Mix this in until all of the flour is dissolved and cook for about two minutes.
Then pour in six cups of chicken broth and bring this to a simmer.
We're going to season this with half a teaspoon of dried thyme and return the chicken to the
pot.
Once simmering reduce the heat to medium low and you're going to cover it with a lid and
let it simmer for about 15 minutes until that chicken is cooked all the way through and
the vegetables are tender.
Then we're going to take the lid off and remove the chicken from the pot and shred it into
pieces.
Then add it back into the pot.
All that's left to do to finish it off is we're going to add in one pound of dried gnocchi
and you can use the regular size or they've started selling mini which I love.
One cup of frozen peas and one cup of heavy cream to finish it off.
Let it simmer for five minutes and then those gnocchi will be ready.
The peas will be warm and you will be ready to eat.
Let's give it a taste.
Tastes just like chicken pot pie.
I love having the gnocchi in there.
It's very much like the pastry of the pie crust.
You've got to make this one total comfort food in a bowl.
