Welcome to Enobin Foods Today I'm making Chicken Pide a Turkish-style
bread that's crisp at the edges soft inside
and packed with juicy chicken and cheese
Many say it's even better than pizza Let's start the recipe In a bowl add
110 milliliters of warm water 1 teaspoon of sugar and 1 teaspoon of yeast
Stir well and set aside for 5 minutes to activate Always activate yeast before
kneading the dough Add 1 cup of flour 1
teaspoon of salt and 1 tablespoon of oil
Knead until smooth and soft Pide is Turkey's answer to pizza
Rub some oil on top and set aside for 40 minutes
For the chicken filling take ¼ cup of curd
½ teaspoon red chili powder ½ teaspoon red chili flakes ½ teaspoon
black pepper ½ teaspoon mixed herbs ½ teaspoon cumin ½ teaspoon sal
1 teaspoon ginger garlic paste and 1 tablespoon oil
Stir well and add 1 cup of chicken pieces
Stir again Cook the chicken mixture in a frying pan
Cover and cook for 7 to 8 minutes or until all the liquid has evaporated
Keep the chicken filling dry to prevent soggy bread
Set aside for now Divide the dough and roll it out
Spread mozzarella cheese along the edges and fold them to shape the pide
The folded edge helps keep the topping securely in place
Prick the base with a fork to prevent it from
puffing up unevenly Add the cooked chicken to the center and top with mozzarella cheese
Brush the edges with egg yolk—this gives pide its glossy bakery-perfect finish
Place in an oil-greased 6-inch mold lined with baking paper
Place a pan with a wire rack inside on the stove and preheat over medium-low heat for 5 to 7 minutes
Pide is traditionally baked in stone ovens
Cook for 18 to 20 minutes over medium-low heat until golden brown Chicken is a rich
source of high-quality protein and homemade bread contains less oil than fast food
Yogurt helps keep the chicken tender and portion control makes it a balanced meal Your
chicken pide is golden cheesy and bursting
with flavor Serve it hot and slice it like pizza
